Jeg har alltid vært glad i risotto, men i det siste har jeg fått helt dilla, og lager risotto i alle mulige forskjellige varianter. Siste tilskudd til risottofamilien min er en herlig tomatrisotto. Denne smaker herlig, friskt av solmodne tomater og sommer. Det skal ikke stikkes under en stol at en tomatrisotto aldri blir skikkelig god om tomatene ikke er gode, derfor er det definitivt vel verdt tiden og pengene å finne noen gode tomater. Jeg prøvde meg først på en variant med vanlige tomater som kanskje var litt på den oransje siden. Det ble ikke noe særlig. Risottoen fikk en blass smak og det fantes ikke en grunn i hele verden til å bli begeistret av den versjonen. Men jeg hadde satt meg fore at tomatrisotto kan være skikkelig digg, så jeg forsøkte igjen.

Denne gangen brukte jeg en god del flotte cherrytomater som formelig oste sol og sommer. Og jeg lover deg. Det gjorde susen.  For resultatet ble altså en tomatrisotto med flott farge som virkelig smakte av tomater og var både frisk og sommerlig.

Risottoen kan gjerne spises som en selvstendig rett, som forrett eller som tilbehør til for eksempel fisk. Og husk at det alltid er gjestene som skal vente på risottoen og ikke omvendt.

Ingredienser

  • 2 dl risottoris (arborio eller carnaroli)
  • 1 fedd hvitløk
  • 1 stor sjalottløk
  • 20 + 20 modne cherrytomater
  • 1 dl hvitvin (evt. 1 dl vann med 1 ts hvitvinseddik)
  • 6 dl grønnsaksbuljong
  • 2 ss revet parmesan
  • God olivenolje

Fremgangsmåte

  • Finhakk hvitløk og løken og del cherrytomatene i små biter.
  • Sett ovnen på 200 grader varmluft.
  • Legg halvparten av tomatene i en ildfast form og drypp over litt olivenolje, salt og pepper. Bak i ovnen i ca. 20 miutter.
  • Varm litt olivenolje i en gryte og fres hvitløk og løk på middels varme til det blir mykt og blankt.
  • Tilsett risen og rør godt slik at risen også blir blank og får olivenolje på seg.
  • Kok opp grønnsaksbuljongen og hold den varm gjennom hele prosessen.
  • Senk varmen til middels lav og hell på hvitvinen (evt. vannet). Rør mens det koker helt inn.
  • Tilsett tomatene og rør godt.
  • Tilsett den varme grønnsaksbuljongen litt etter litt og la risen absorbere buljongen mellom hver gang. Rør mye i gryten.
  • Fortsett til risen er mør. Det tar ca. 20 minutter.
  • Rør inn parmesanen og et par spiseskjeer med god olivenolje når risen er ferdigkokt.

Server straks, med de bakte tomatene på toppen og litt hakkede urter om du har. Sett også gjerne frem litt ekstra parmesan om i tilfelle noen ønsker litt mer.

Tips

Server risottoen som en forrett til fire eller hovedrett til to. Den kan også brukes som tilbehør til fisk.
