Det har kommet en del nye lammeprodukter i butikkene. Poenget med disse produktene er at de skal ta kort tid å tilberede, og det er jo gull verdt i en litt travel hverdag. Jeg hadde lyst til å prøve lammeskav og bestemte meg for å servere det med inspirasjon fra Midtøsten. Resultatet av dette forslaget ble pitabrød fylt med lam, grønnsaker og tzatziki. Dette ble en knallgod hverdagsmiddag som de aller fleste kan få til på nokså kort tid. Det som tok lengst tid å lage var tzatzikien, men den kan jo lages på forhånd, eller så får man leve med at den blir litt vel flytende.

Ekstra godt blir det selvsagt om pitabrødene er hjemmelagde og helt nystekte, men jeg innser at det ikke alltid er lett å få til på en hverdag. Men kanskje en dag i påsken…? Oppskriften min gir 12 brød, men det gjør jo ikke noe for pitabrødene egner seg jo supergodt som turmat også.  Så neste dag er det jo bare å fylle resten av brødene med hva du måtte ha. Gulost og skinke med litt rømmedressing og en tomatskive er også helt fint. Så er det jo bare å spenne på seg skiene og gå påsketuren.

Ingredienser

  • 400 gr lammeskav
  • 1 ts korianderfrø
  • 1 ts fenikkelfrø
  • 1 ts spisskummen
  • 1 ts hel sort pepper
  • 2 ts oregano
  • 1/2 ts salt
  • olje til steking
  • ---
  • 2 tomater
  • 1 hjertesalat
  • 1 liten rødløk
  • --
  • 1 beger yoghurt naturell
  • 1 slangeagurk
  • 1/2 ts salt
  • 2 fedd hvitløk
  • 2 ss sitronsaft
  • --
  • 8 pitabrød

Fremgangsmåte

  • Begynn med å lage tzatziki. Hell yoghurten oppi en sil med et kjøkkenhåndkle oppi. La yoghurten dryppe av seg i minst 30 minutter og gjerne lenger.
  • Riv agurken på den grove siden av rivjernet og klem ut så mye væske som mulig.
  • Bland agurken med finhakket hvitløk inn i yoghurtern. Smak til med salt og sitron. Sett til side. Denne kan gjerne stå en stund slik at smakene får satt seg.
  • Bland krydderne i en morter og knus til et grovt pulver.
  • Skjær opp grønnsakene i strimler og legg på et fat.
  • Varm olje i en stekepanne og fres krydderblandingen i ett minutter eller to, til det begynner å dufte herlig av krydder. Tilsett lammeskav rett fra fryseren og stek over sterk varme til kjøttet er godt stekt.

Server i varme pitabrød. Vel bekomme.
