Det er snart skolestart, og som de fleste andre foreldre (formoder jeg) er jeg opptatt av hva de håpefulle spiser i løpet av skoledagen. De er nokså kresne, så det er ikke så lett å alltid ha noe i huset som frister. Dessuten skal selve lagingen av matpakken helst gå veldig fort. Det er derfor mye som i utgangspunktet kunne vært godt, som faller bort. Det er imidlertid én ting som sjelden slår feil og det er pizzasnurrer. Derfor baker jeg innimellom en stor porsjon snurrer som jeg fryser ned. Med slike i fryseren er det en smal sak å lage en fristende matpakke. Alt som trenger å gjøres om morgenen er å ta en eller to snurrer og legge i en matboks sammen med litt frukt og grønt og voila, matpakken er klar. Innen det er spisefriminuttet er pizzasnurren tint og klar til å bli spist.

Med litt grovt mel i deigen og karbonadedeig som fyll, er disse snurrene sunne og næringsrike nok til at jeg synes det er helt OK, og bedre av mange av alternativene.  Oppskriften gir et halvgrovt brød (50% på brødskalaen).

Mine pizzasnurrer har jeg altså fylt med karbonadedeig, men det går selvsagt fint an å fylle dem med andre ting, som hakkede pølsebiter, kokt skinke eller bare masse grønnsaker for en vegetarvariant.

En annen populær skolemat er disse empanadene med kjøtt og paprika eller disse vegetarempanadaene.

Ingredienser

  • 5 dl hvetemel
  • 5 dl sammalt fint hvetemel
  • 5 dl vann
  • 50 gr. gjær
  • 2 ts salt
  • 2 ss olivenolje
  • --
  • 400 gr karbonadedeig
  • olje til steking
  • 1 liten løk
  • 2 fedd hvitløk
  • 2 store tomater
  • 1 dl vann
  • 1/2 ts salt
  • nykvernet pepper
  • 2 ts tørket oregano
  • 1/2 boks tomatpuré
  • ost

Fremgangsmåte

Oppskrften gir ca. 24 snurrer

  • Bland det tørre til pizzadeigen. Varm opp vannet til 37 grader og rør ut gjæren. Hell gjærblandingen i melet og elt alt godt sammen.
  • La deigen heve til dobbel størrelse.
  • Mens deigen hever, stek karbonadedeigen til den blir grynete og brun. Finhakk løk og hvitløk og fres det sammen med kjøttet til det er blankt men ikke har tatt farge.
  • Hakk tomatene og ha dem sammen med vannet og krydderet oppi stekepannen,og la det koke til nesten all væsken har kokt inn. Det er viktig at sausen ikke er for våt.
  • Riv ost.
  •  Når deigen er ferdig hevet kjevles den ut til et stort rektangel på ca 80x40 cm.
  • Smør tomatpuré på på ca. 2/3 av deigen og fordel kjøttsausen utover det samme feltet. Strø på osten.
  • Lag en lang pølse ved å rulle deigen sammen mot den delen som ikke har fyll på seg.
  • Skjær pølsen i ca 2 cm tykke skiver. Disse settes på platen og etterheves i ca. ½ time.
  • Stekes i ca. 15 minutter på 200 grader.
  • Avkjøl på rist og frys ned.

Hmm… Du skriver om steking av kjøttdeig, men har det ikke i ingredienslisten..?

Ups, en skikkelig tabbe. Takk for at du sa i fra! Jeg har laget disse mange ganger og oftest med kjøttdeig, så jeg skrev ned oppskriften før jeg lagde snurrene. Men da det kom til stykket denne gangen hadde vi ikke kjøttdeig, men pepperoni, og så ble det det. Jeg husket å endre i oppskriften, men altså ikke i selve teksten. Nå er det rettet opp.
