Små forundringspakker er alltid populær mat. Deig med noe inni er spennende og det finnes varianter av slike retter i svært mange land – empanadas fra Sør-Amerika, piroger fra Øst-Europa, minipaier fra Frankrike, calzone fra Italia og samosa fra India for å nevne noen. Empanadas lages vanligvis med kjøttfyll. Men på vår kjøttfrie dag serverer jeg en vegetarisk variant med inspirasjon fra Italia. For  disse små pakkene kan jo fylles med hva hjertet begjærer og kjøleskapet inneholder. I mine ble det et deilig fyll med tomat, aubergine og mozzarella, så dette er altså en cross-over rett fra Sør-Amerika og Italia.

Empanadas lages med mørdeig, til forskjell fra for eksempel piroger og calzone som lages med gjærdeig. Jeg synes vanligvis at mørdeig er noe herk. Smuldringen av smøret i melet tar tid og er kjedelig og deigen blir vanligvis ganske kort og vanskelig å arbeide med. Denne gangen gjorde jeg det annerledes. Jeg brukte kjøkkenmaskinen. Deigen ble ferdig på et blunk og konsistensen ble utrolig bra. Det siste kan jo skyldes at oppskriften var god, men lignende har jeg i hvert fall aldri opplevd. Deigen ble faktisk elastisk og utrolig god å arbeide med.

Fyllet ble laget med aubergine, tomater og løk. Auberginer er en av mine favorittgrønnsaker, og særlig når det er snakk om vegetarretter. Jeg har mange oppskrifter med auberginer. Auberginene har en litt kjøttaktig konsistens som metter godt synes jeg.

Ingredienser

  • 5 dl hvetemel
  • 1/2 ts salt
  • 150 gr smør
  • 1 dl vann
  • --
  • 1 aubergine
  • 2 ss olje til steking
  • 1 løk
  • 2 fedd hvitløk
  • salt og pepper
  • 1 rs oregano
  • 1 ts tørket persille
  • 1/2 glass tomatpure
  • 2 dl vann
  • 1 mozzarellaost
  • 1 egg

Fremgangsmåte

Oppskriften gir 12 stk.

  • Start med å lage deigen. Bland mel og salt og smuldre inn smøret. Bland inn vannet og kna deigen til den er smidig. Alternativt kan du bruke en kjøkkenmaskin.
  • La deigen hvile minst 1/2 time i kjøleskapet.
  • I mens kan du lage fyllet. Skjær auberginen i små terninger (0,5 x 0,5 cm). Finhakk løk og hvitløk.
  • Varm oljen i en stekpanne på middels varme. Stek auberginen til den er myk og har falt sammen. Ha i løk og hvitkøk og fortsett å steke til løken har blitt blank og myk.
  • Tilsett tomatpure fres ett minutt. Ha i vannet og urtene og smak til med salt og pepper.
  • La det småkoke til det mest av vannet har fordampet. Fyllet skal være nokså tørt.
  • Sett til side og la det kjøle seg ned til romtemperatur.
  • Sett ovnen på 200 grader.
  • Ta deigen ut av kjøleskapet og kjevle ut til en tynn leiv som er ca. 3 mm tykk. Bruk en skål som mal og skjær ut rundinger som er ca. 15 cm i diameter.
  • Skjær mozzarellaen i små terninger.
  • Legg sirklene over på en bakeplate med bakepapir på.
  • Legg 1 ss fyll på den ene halvdelen av hver og litt mozarella på.
  • Brett deigen over på midten slik at det blir halvmåner. Klem godt sammen med en gaffel rundt kanten for å lukke.
  • Pensle med sammenpisket egg. Stek i 15 minutter.
