Har du noen gang sittet på en solvarm trapp med en liten kopp sukker og en lang rabarbrastilk og frydet deg over den sure og søte smaken, klødd ettertenksomt på et myggstikk og sett en sommerfugl flagre forbi. Da er det sommer. For meg er dette gode barndomsminner.

I hagen min har jeg en rabarbraplante. Den gir rikelig av seg, så det gjelder å få brukt av den nå mens den er på sitt beste. Selvfølgelig kan hele familien sutte på rabarbrastilker med sukker på, men jeg liker jo best å være litt mer oppfinnsom.

I dag ble det rabarbrakake til dessert. Utgangspunktet for denne kaken er en oppskrift på eplekake som jeg har fått av svigermor. Vanligvis lager vi den med glassepler som også er veldig sure, så da tenkte jeg den ville passe godt med rabarbra også, og det gjør den. Det er en veldig saftig og god kake med nok sødme til å klare de sure rabarbrabitene.  Et annet pluss med denne kaken er at den er svært lettlaget og selvfølgelig kjempegod. Så tidlig på sesongen som det er nå, er det ikke nødvendig å skrelle rababraene heller. Bare skyll godt og skjær i biter.

Ingredienser

  • 200 gr sukker
  • 3 egg
  • 200 gr hvetemel
  • 2 ts bakepulver
  • 200 gr smør
  • 3 stilker rabarbra
  • 2 ss brunt sukker

Fremgangsmåte

  • Sett ovnen på 175 grader.
  • Lag eggedosis av egg og sukker.
  • Bland sammen mel og bakepulver og sikt det ned i eggedosisen.
  • Smelt smør og bland inn i røren.
  • Vask rabarbraen og skjær den i 2 cm lange biter.
  • Hell deigen i en rund form og stikk rabarbrabitene nedi.
  • Dryss det brune sukkeret opp kaken.
  • Stek kaken i ca.45 minutter. Stikk en fyrstikk nedi og sjekk at det ikke henger noe deig igjen på den når du tar den opp. Dersom det ikke gjør det er den ferdig.

Avkjøl kaken litt og server med iskrem. Vel bekomme.
