Plommesesongen er kort og intens, så det gjelder å spise mens den varer. I hagen bugner plommetreet og jeg forsøker å komme opp med forskjellige måter å bruke disse deilige fruktene på. I dag har jeg laget plommekake med smuldretopp. Og helt sånn ubeskjedent må jeg si at dette ble veldig godt.

Selv om jeg har blitt bedre på baking med årene, er jeg fortsatt ikke veldig komfortabel med å «lage» nye oppskrifter. Derfor liker jeg best å ta utgangspunkt i en kake jeg vet fungerer, og så justere litt på den oppskriften. Utgangspunktet for denne kaken er en oppskrift på eplekake jeg har fått av min bakeglade svigermor.

En sånn plommekake monner kanskje ikke på det å få spist opp alle plommene på et tre, men det går jo an å kose seg mens man lurer på hva man skal gjøre med resten. Og i så måte fungerer plommekake med smuldretopp helt supert.

Plommene i hagen er forresten litt magiske. De er blå/lilla når de henger på treet, og gule inni. Men så snart jeg lager noe med dem, så blir de røde som bringebær. De får en aldeles nydelig farge, og det gjelder om jeg bruker dem som her i en kake, lager syltetetøy eller saft. Om ikke det er hverdagsmagi, så vet ikke jeg.

Ingredienser

  • 200 gr sukker
  • 3 egg
  • 200 gr hvetemel
  • 2 ts bakepulver
  • 1 sitron, skallet
  • 200 gr smør
  • 500 gr plommer
  • --
  • 50 gr mandler
  • 60 gr brunt sukker
  • 60 gr smør
  • 100 gr hvetemel
  • 1 ts kardemomme

Fremgangsmåte

  • Sett ovnen på 175 grader.
  • Pisk sukker og egg til en luftig eggedosis.
  • Riv sitronskall og ha oppi.
  • Sikt hvetemel og bakepulver inn i blandingen og rør forsiktig.
  • Smelt smøret og rør det inn i deigen.
  • Del plommene i to og ta ut steinen.
  • Smør en kakeform og legg bakepapir i bunnen.
  • Hell oppi deigen og stikk nedi plommene.
  • Mal mandlene til grovt mel i en matmølle.
  • Tilsett sukker, smør, hvetemel og kardemomme og kjør det til det blir en grynete blanding. Strø over kaken.
  • Stek kaken i ca. 45 minutter.

Avkjøl kaken litt og server den lun med pisket rømme eller vaniljeis.
