Når jeg skriver overskriften innser jeg at det ikke akkurat høres ut som det mest spennende man kan spise. Det høres ganske kjedelig ut i grunnen, og det er synd, for dette er kjempegodt. Mange ganger er det enkle det beste og det er tilfellet her. Det tar ikke lengre tid å lage denne retten enn det tar å koke pastaen og ingredienslisten er verken spesielt lang eller eksotisk. Men til tross for sitt enkle vesen, er dette altså nydelig mat. Pasta og brokkoli skal være kokt al dente – det vil si at det fortsatt er litt tyggemotstand i dem. Oljen som smaker av hvitløk og chili gir et lite spark og osten og vannet gir en kremet konsistens uten at retten føles fet.

Pasta med brokkoli er en klassisk rett fra Puglia, men da lages den gjerne med ansjosfilet, og siden mandag er vår vegetardag, droppet jeg ansjosfiletene også. Ansjosfiletene gir en krydret smak, men jeg synes resultatet uten så absolutt står seg.

Det vanligste er å bruke en pastatype som heter orecchiette eller ørepasta som det visst nok betyr. De er litt tykke og er formet omtrent som små albueskjell. Det er ikke alltid så lett å få tak i disse, og i dag fikk jeg det ikke. Så da ble det en annen type småpasta. Den jeg brukte heter casarecce og er også litt tykk i formen.

Ingredienser

  • 400 gr tørr pasta
  • 1 stort brokkolihode
  • 3 store fedd hvitløk
  • 1 rød chili
  • 2 dl fint revet parmesan
  • 4 ss olivenolje
  • 1 dl kokevann fra pastaen
  • nykvernet pepper

Fremgangsmåte

  • Begynn med å skjære brokkolien i små buketter (på størrelse med hvitkløver).
  • Kok pastaen etter anvisning på pakken.
  • Når det er to minutter igjen av koketiden has brokkolibukettene oppi og får koke med resten av koketiden.
  • Ta av 1 dl av kokevannet.
  • Når pastaen er ferdig kokt helles vannet av.
  • Varm oljen på svak til middels varme i kasserollen, og fres finhakket hvitløk og chili i oljen, til oljen har fått smak. Pass på at hvitløken ikke blir brent. Da smaker den bittert.
  • Hell pastaen tilbake i gryten og bland godt med oljen.
  • Ha oppi osten og rør til alt er godt blandet.
  • Hell på kokevannet og rør det inn slik at osten smelter og blir kremet.

Server varm med nykvernet pepper over og mer parmesan om du ønsker det. En frisk tomatsalat smaker godt ved siden av.
