Her kommer en oppskrift på en frisk og mettende sommersalat proppfull av gode smaker. Jeg er veldig glad i thaimat. Med sine klare, friske, rene smaker er dette ypperlig sommermat. Salaten og dressingen er veldig lettlaget, mens fiskepakkene var litt fiklete å få til. Jeg brukte tynt rispapir slik at korianderbladet som ligger inni pakken synes gjennom. Effekten ble veldig flott og verdt strevet, synes jeg. Men jeg ville ikke laget disse pakkene en dag jeg har dårlig tid, for å si det sånn. Salaten ville nok blitt god også med stekt fisk uten omslaget også.

I dressingen bruker jeg de små chiliene de selger i thaibutikker. De er supersterke, så det skal nesten ikke noe til. Det er bedre å begynne med litt og heller ta oppi mer etterpå enn å ta for mye med en gang. Dessuten liker jeg å servere dressingen ved siden av, slik at alle kan forsyne seg med så mye som de vil. Men dressing må det være, for den skaper hele salaten.

I salaten har jeg brukt hjertesalat, agurk, rødløk, sukkererter og reddiker, for det var det jeg hadde. Men her er det litt at man tager hva man haver. Andre salattyper og grønnsaker kan også brukes. Men urtene er viktig for smaksbildet, så de bør man anstrenge seg for å få tak i. I denne salaten er det koriander og mynte, og det er en ganske vanlig kombinasjon.

Ingredienser

  •  2 hoder hjertesalat
  • 1 agurk
  • 1/2 rødløk
  • 6 reddiker
  • 1 pk sukkererter
  • mynteblader fra 5 stilker
  • 1 potte koriander
  • 400 gr torsk
  • 4 ss grovt havsalt
  • rispapir
  • 1 hvitløk
  • rapsolje til steking
  • --
  • 2 ss fiskesaus
  • saften fra 1 lime
  • 2 ts sukker
  • 1/2 - 1 sterk chili
  • 1 fedd hvitløk

Fremgangsmåte

  • Begynn med å drysse torsken med saltet og la det ligge i ca. 10 minutter. Skyll av saltet og klapp fisken tørr.
  • Legg fisken kaldt mens du lager til salaten.
  • Lag salaten ved å rive hjertesalaten i biter. Del agurken i to på langs og skrap ut kjernen og skjær i biter. Skjær løken og reddikene i tynne skiver. Skjær sukkerertene i 4 på skrå. Bland alt i en skål.
  • Lag dressingen. Ta frøene ut av chilien ved å skjære av toppen og rulle den mellom fingrene slik at frøene løsner. Hell ut frøene. Skjær chilien i veldig tynne ringer og hvitløken i tynne skiver. i Bland alle ingrediensene til dressingen og sett til side.
  • Kok rispapiret etter anvisningen på pakken. Skjær fisken i små porsjonsstykker. Legg et korianderblad og en hvitløksskive på hver fiskebit og pakk inn hver fiskebit i et rispapir.
  • Varm oljen og stek bitene på begge sider til fisken er gjennomstekt og rispapiret har blitt sprøtt.
  • Legg fiskestykkene oppå salaten og server straks med dressingen ved siden av.

Kokt ris kan også være godt ved siden av.
