Det er fortsatt et par uker til vi ser St. Hans, og rabarbraen er fortsatt på sitt beste og den planten jeg har i hagen er temmelig produktiv. Dermed så gjelder det jo å finne noe godt å bruke rabarbraen til. Så jeg begynte å tenke at det man kan bruke syrlige sommerepler til, kan man vel bruke rabarbra til også, og dermed kom ideen med rabarbrastrudl. I min versjon er det syrlig rabarbra, søte rosiner og sprø, flakete deig rundt. Herlig.

Ser man bort fra at det var litt plundrete å få filodeigen fra hverandre (mest fordi jeg ikke hadde tålmodighet til å vente til den var helt tint), så var dette også en veldig enkel kake å få i stand. Får du ikke tak i filodeig, kan du bruke butterdeig i stedet.

Ingredienser

  • 6 dl rabarbra skåret i 1 cm tykke biter
  • 100 gr lyse rosiner
  • 1,5 dl sukker
  • 1 ss potetmel
  • 100 gr smør
  • 6 ark filodeig

Fremgangsmåte

  • Sett oven på 200 grader.
  • Bland sukker og potetmel med rabarbra og rosiner og sett til side.
  • Smelt smøret.
  • Legg ett ark med filodeig flatt på benken. Pensle med smør og legg et nytt lag oppå. Gjenta til alle de seks arkene er brukt opp.
  • Legg fruktblandingen på den ene siden av filodeigleiven, men la det være 5 cm klaring til kantene. rull leiven stramt sammen rundt rabarbrafyllet.
  • Legg den på et stekebrett med bretten ned og brett også sidene inn under rullen. Pensle med resten av smøret. Sett kaken inn i forvarmet ovn på 200 grader i 30-35 minutter til kaken har blitt pent brun. Ta den ut av ovnen og la den avkjøle seg.

Server den lun eller romtemperert med et melisdryss på toppen, og evt. med is ved siden av om du har det.
