Tabbouleh er ekte sommermat. Spis den alene eller som tilbehør til for eksempel grillmat. Retten kommer fra området innerst i Middelhavet – nærmere bestemt Jordan, Syria og Libanon, men har spredt seg til hele området. Tabbouleh inngår gjerne i en tradisjonell meze som en av flere småretter.

Hovedbestanddelen i denne salaten er bulgur. Det utvinnes av hvete og minner om couscous, men bulgur inneholder en større del av kornet og er derfor mer næringsrikt. Får du ikke tak i bulgur, går det fint an å bruke couscous i stedet.

Som med de fleste tradisjonsretter rundt om i verden, er det like mange måter å lage denne salaten på som det er husmødre. Tradisjonelt skal det være bulgur, agurk, urter (koriander, mynte og persille) og sitronsaft og olivenolje. Svært mange bruker også tomater. Jeg har også brukt granateple som er en vanlig frukt i området. Her er altså min versjon.

Ingredienser

  • 4 dl ukokt bulgur
  • 1 agurk
  • 2 tomater
  • 1/2 rødløk
  • 1 granateple
  • 1 stor neve koriander
  • 1 stor neve mynte
  • 1 stor neve bladpersille
  • saften fra 1/2 sitron
  • 3 ss god olivenolje
  • nykvernet pepper

Fremgangsmåte

  • Kok bulguren etter anvisningen på pakken og kjøl ned til romtemperatur.
  • Del agurken i to på langs og skrap ut den myke kjernen. Skjær agurken i små terninger.
  • Del tomatene i båter og ta ut innmaten. Skjær så i små terninger.
  • Finhakk løken. Ta kjernene ut av granateplet.
  • Finhakk alle urtene.
  • Ha alle ingrediensene i en bolle og hell over sitronsaft og olivenolje og bland alt godt.
  • Smak til med nykvernet pepper.

Server alene for eksempel med pitabrød, eller ved siden av grillmat.
