Hjemme hos oss er det ikke så vanlig med dessert, ikke på søndager en gang. Det skyldes ikke at jeg har noe imot dessert, det er bare det at jeg glemmer det. Dessert betyr ikke så mye for meg. Jeg er mer interessert i forretter for å si det forsiktig. Men Tuppen og Lillemor og i sær sistnevnte blir veldig glad når det en sjelden gang blir dessert. Og i sommersesongen har det en tendens til å bli dessert litt oftere, for da er det så mye deilig og fristende. Akkurat nå har vi en rabarbraplante som er best før St. Hans og dermed blir det litt rabarbradesserter.

Denne søndagen ble det en kald rabarbrasuppe med snøegg. Jeg hadde tenkt på denne rabarbrasuppen i flere dager og lekt litt med hvordan jeg kunne smaksette den. Jeg var innom stjerneanis, sitrongress, mynte og til og med chili før jeg landet på ingefær og brunt sukker. Jeg tror nok flere av de andre krydderne også hadde blitt godt, og det skal nok prøves ut senere. Men denne gangen ble det altså ingefær og så byttet jeg ut vanlig hvitt sukker med brunt sukker. Det har en mer krydret smak enn vanlig hvitt sukker og var derfor med på å gi suppen litt mer karakter. Men på grunn av det brune sukkeret er suppen mer brunlig enn vanlig rabarbrasuppe. Noen synes kanskje det ser litt rart ut, men jeg synes absolutt at smaken forsvarer den litt uvanlige smaken.

Suppen skal serveres skikkelig kald, slik at den virker svalende på en varm sommerdag – sic. Selv om vi ikke har skikkelige varme sommerdager (ennå) skal suppen serveres kald. Den kan gjerne stå i kjøleskapet et par dager. Suppe tar absolutt ikke lang tid å lage, men fordi den altså skal kjøles helt ned, bør den lages noen timer i forveien.

Som tilbehør til suppen har jeg laget snøegg (oeufs a la neige). Disse er en klassisk fransk dessert som gjerne serveres i vaniljesaus, men kan også serveres i fruktsauser. Jeg synes at en søt luftig sky ville passe perfekt til den syrlige, krydrete suppen. Jeg søkte en del på nettet etter oppskrifter og fant at det skulle være ca. 10 gr sukker pr eggehvite. Det brukte jeg, men det synes jeg ble alt for lite søtt. I oppskriften nedenfor har jeg derfor doblet mengden sukker. Det er selvsagt en smakssak, men jeg synes at marengsen skal være skikkelig søt, og det blir den ikke med 10 gr sukker per hvite.

Ingredienser

  • 6 dl rabarbra skåret i 1 cm store biter
  • 7 dl vann
  • 1 1/2 dl brunt sukker
  • 1 bit ingefær på størrelse med en valnøtt skåret i skiver
  • --
  • 2 eggehviter
  • ørlite salt
  • 40 gr sukker

Fremgangsmåte

  • Ha rabarbra, sukker, ingefær og vann i en kasserolle og kok opp. La det koke i ca. 15 minutter.
  • Sil suppen gjennom et klede og la den avkjøle seg først på kjøkkenbenken og deretter i kjøleskapet til den er helt kald.
  • Lag snøeggene ved å piske eggehviter og salt til det er stivt.
  • Tilsett sukkeret 1 ss av gangen og fortsett å piske til marengsen er helt stiv og blank.
  • Fyll en stor gryte med vann og kok opp.
  • Lag snøeggene ved å fylle 1 ss med marengsen og la den gli forsiktig ned i vannet. La den koke  i ca. 1 minutt før du snur egget og lar det koke like lenge på den andre siden.
  • Det blir ca. 8 egg. Fisk eggene opp og la dem renne av seg på kjøkkenpapir.
  • Legg deretter over på bakepapir dersom det er en stund til desserten skal serveres.
  • Ved servering helles suppen i dype tallerkener.
  • Legg et par egg i hver tallerken og pynt evt. med litt sitronmelisse eller annet grønt som passer.
