Egg og asparges er en klassisk kombinasjon. Tidligere har jeg skrevet om asparges mimosa her på bloggen. Denne gangen er det en annen variasjon over samme tema. Aspargesene er hvite, og egget er posjert og ikke kokt. Inntrykket blir et helt annet, men fremdeles knakende godt. Da jeg skulle lage denne retten fant jeg noe spekeskinke av villsvin i kjøleskapet. Denne var blitt litt hard i kantene, så jeg valgte å tørke den i ovnen og smuldre over retten til slutt. Det gav en deilig smaksmessig kontrast til egget og en fin krønsj til retten.

Jeg har forsøkt å posjere egg en gang før. Det ble ikke helt vellykket fordi egget ikke var så ferskt. Resultatet var at hviten ikke samlet seg så fint rundt plommen. Denne gangen hadde jeg kjøpt nye egg og da gikk det greit. Det er slett ikke så vanskelig å posjere egg som jeg har gått rundt og trodd. Fort gjort var det også, veldig lekkert på tallerkenen. Det er åpenbart to skoler hva angår posjering av egg. Noen mener at man skal lage en virvel ved å røre rundt i gryten rett før eggene has oppi, mens andre mener at dette er unødvendig. Formålet med denne virvelen er at hviten skal samle seg bedre rundt plommen. Siden jeg posjerte to egg samtidig så jeg for meg at de kunne komme borti hverandre så jeg lot være. Resultatet ble bra allikevel, så om virvelteorien har noe for seg vet jeg ikke.

Ingredienser

  • 1 bunt hvite asparges
  • 2 ferske egg
  • 2 ss hvitvinseddik
  • 2 liter vann
  • 4 skiver spekeskinke
  • 1 ss smør
  • persille til pynt

Fremgangsmåte

  • Begynn med spekeskinken. Sett ovnen på 150 grader og legg spekeskinken på et bakepapir på et stekebrett. Stek skinken til den har blitt helt tørr men ikke så lenge at den blir brent. Ta den ut og legg den over på noe annet så den ikke tørkes ytterligere på ettervarmen fra stekebrettet.
  • Skrell aspargesen. Jeg pleier å legge den flatt på en fjøl og bruke en gulrotskreller som skjærer tynt. På den måten er det lettere å unngå at aspargesen brekker. Knekk av den nederste treene delen.
  • Kok opp vann og tilsett 1 ts sukker og like mye salt. Kok aspargesen til den er mør ca. 10 minutter.
  • Kjenn på den med en spiss kniv. Kniven skal gli lett inn i aspargesen.
  • Lag samtidig de posjerte eggene. Kok opp vannet i en stor gryte og tilsett eddiken. Knekk hvert egg i en kopp eller lignende. Vannet skal syde, ikke fosskoke.
  • Hell eggene forsiktig oppi vannet og la dem koke i 3 minutter. Da er hviten blitt fast og fin, men plommen er fortsatt flytende. Kok et minutt eller to lenger dersom du ønsker fastere plomme.
  • Når aspargesen er ferdig kokt tas de ut av vannet og legges over på to tallerkener.
  • Legg på noen mindre klatter med smør. Når eggene er ferdig posjert tas de opp med en hullsleiv og legges forsiktig over på kjøkkenpapir for å renne av seg. Flytt over på tallerkenene oppå aspargesen.
  • Skjær et kutt i egget slik at eggeplommen renner utover. Knus skinken i hånden og dryss over sammen med litt persille.
