Det er ikke så ofte at Husbond og jeg får hatt en bedre middag alene sammen lenger. Så når både Tuppen og Lillemor var borte på lørdagskvelden, måtte vi selvsagt benytte anledningen. Ved slike aneldninger er det godt med tid, litt vin i glasset, behagelig musikk i bakgrunnen. Da sitter praten og latteren løst og maten blir god. Når en sånn kveld står for døren, liker jeg å ta turen ned til Mathallen for å se hva de kan friste med. Ofte velger jeg noe godt fra havet. Denne gangen var det altså skate som fristet mest. Det er ikke så ofte jeg ser den i fiskedisken, så da måtte det selvsagt bli denne vakre, mystiske fisken som glir gjennom vannet med sine «vinger». Derfor kalles også fisken for skatevinge.

Resten av menyen besto av østers, asparges med posjert egg og skinke og jordbær med sjokolade til dessert. Mer om disse andre rettene kommer også på bloggen etter hvert.

På skaten er det vingene vi spiser og ikke selve fiskekroppen. Jeg var så heldig at fisken var renset for ben og skinn av fiskehandleren, så den var bare til å legge rett i pannen. Denne gangen valgte jeg en helt klassisk tilberedelse med brunet smør smakssatt med sitron, kapers, sjalottløk og persille – a la grenobloise kalles det visst. Jeg synes det holdt å servere en frisk grønn salat og litt ekstra sitron til å klemme over. Vil du ha litt mer mat, er det helt sikkert ikke feil med en luftig mandelpotetpure ved siden av.

Ingredienser

  • 400 gr skate
  • salt og pepper
  • olje til steking
  • 2 ss smør
  • 100 gr smør
  • saften fra 1/2 sitron
  • 2 ss kapers
  • 1/2 finhakket sjalottløk
  • 1 ss finhakket persille

Fremgangsmåte

  • Varm en stekepanne (eller to) til middels varm og ha oppi olje.
  • Krydre skaten med salt og pepper og legg den oppi stekepannen med det som har vært skinnsiden ned.
  • Ha de to spiseskjeene med smør oppi. La det steke til du ser at fisken er nesten helt stekt igjennom. Øs over olje/smørblandingen av og til. Dette tar kanskje 10-15 minutter, alt etter hvor tykk fisken er.
  • Mens fisken steker, skjær resten av smøret i terninger og ha det i en liten kjele. Smelt smøret og pisk i det til det blir lysebrunt og det begynner å lukte litt nøtteaktig.
  • Hell oppi sitronsaften. Pass på det kan sprute en del. Tilsett kapersen, løken og persillen. Hold smørsausen varm til fisken er klar.

Server fisken med sausen helt over og sitron til å klemme over. En grønn salat er godt ved siden av.
