Å legge maten på et stekebrett og la ovnen gjøre jobben har blitt populært. Det handler selvsagt om hvor mye tid og energi man har lyst til å bruke på å lage middag, men det handler også om god smak. Ovnsbakt sei med sitron og hvitløk er eksempel på en sånn rett. Den er enkel å lage, og samtidig proppfull av gode smaker.

Sei er en av disse hverdagsheltene som ikke gjør så mye ut av seg der den ligger i fiskedisken. Det er det ingen grunn til. Sei er skikkelig digg mat og ikke minst veldig fleksibel. Steke, bake, trekke, fiskefarse, gryter og ovnsretter – det er mye man kan lage med seien. Klassikeren seibiff med løk er selvsagt en klassiker fordi det er kjempegodt. Men det er altså ingen grunn til å stoppe der. Bruk sei til andre ting også.

Ovnsbakt sei med sitron og hvitløk er altså en deilig middagsrett. Smør, sitron og hvitløk spiller nydelig sammen og kapers gir et ekstra lite kikk til retten. Jeg serverte den sammen med stekesjyen blandet sammen med litt ekstra smeltet smør, kokte poteter og brokkolini.

Ett triks når man tilbereder hvit fisk er å drysse rikelig med salt over fisken og la den ligge i ca. 10 minutter. Skyll så av saltet og klapp fisken tørr. Nå kan du tilberede fisken akkurat som du vil, eller du kan oppbevare den i kjøleskapet til senere. Faktisk gjør denne behandlingen at fisken får litt lengre holdbarhet. Andre grunner til å gjøre dette, er selvsagt at det gjør noe med smaken. Fisken smaker litt mer, og kjøttet blir faktisk litt hvitere.
