Ettersom jeg stadig er på utkikk etter nye smaker og nye måter å gjøre ting på, kan det være lett å glemme de norske klassikerne. Men det er det ingen grunn til. Det er faktisk en god grunn til at de har blitt klassikere – og det er at de smaker skikkelig godt. Som seibiff med løk, for eksempel. Godt krydret seifilet som har fått nok fett i pannen til at det danner seg en god og sprø stekeskorpe og så den nydelige karamelliserte løken da – det er jo rett og slett kjempegodt.

Jeg serverer seibiffen med kokte poteter, revne gulrøtter og brunet smør. I dag blandet jeg litt vårløk inn i gulrøttene og klemte over en skvis appelsinsaft. Mer komplisert trenger det ikke være. Med andre ord; seibiff med løk fortjener absolutt sin plass på middagsbordet fra tid til annen.

Ingredienser

  • 800 gr seifilet
  • 3 middels store løk
  • 0,5 dl hvetemel
  • 1 ts salt
  • 1/2 ts pepper
  • 1 ts sukker
  • smør/margarin til steking
  • poteter til fire
  • 3 gulrøtter
  • 1 vårløk
  • 2-3 ss appelsinjuice (alternativt sitronsaft)
  • 100 gr smør

Fremgangsmåte

  • Begynn med å rense løken og skjære den i 3-4 mm tykke skiver.
  • Sett på potetene til kok.
  • Smelt litt smør i stekepannen og ha oppi løken. Stek løken på middels varme i 5 min. Tilsett sukkeret og fortsett å steke til løken har blitt helt myk og fått gyllen farge. Det tar minst 15 min til, så vær tålmodig og rør av og til i løken.
  • Riv gulrøttene og finsnitt vårløken. Bland sammen og drypp over appelsinjuicen. Sett til side.
  • Skjær seifileten i fire fine "biffer"
  • Ha 100 gr smør i en liten gryte og la det smelte. La det fortsette å småkoke til bunnfallet har får farge. Da er smøret ferdig. Hold det varmt mens fisken stekes.
  • Bland hvetemel, salt og pepper i en skål og legg seibiffene oppi og sørg for at de får mel på alle overflater.
  • Smelt smør/margarin i en stekepanne og stek fisken på middels høy varm til den har fått fin stekeskorpe og du ser at varmen har begynt å trekke gjennom fisken. (det ser du på sidene).  Tilsett litt mer smør i pannen og snu fisken og stek videre i 4-5 minutter til den har fått en fin stekeskorpe på den andre siden også.

Server fisken og løken med poteter, de revne gulrøttene og brunet smør. Vel bekomme.

Ja, så enkelt og så godt. Ikke et vondt ord om tradisjonsmat. Det er en grunn til at sånne ting blir klassikere.
