Lemon curd er frisk og samtidig søt sitronkrem. Så utrolig godt på en brødskive, boller, scones, på pavlova, i rullekaken eller rett og slett bare spise rett ut av glasset.

Av en eller annen grunn hadde jeg fått det for meg at var vanskelig å lage lemon curd. Det er det faktisk ikke. Det var ganske så lett. Det eneste litt brysomme er at man må følge med, passe temperaturen og røre rundt. I nesten alle oppskrifter på lemon curd jeg har lest, gjøres det et stort nummer ut av at dersom temperaturen blir for høy, vil eggene koagulere. Og da  sitter man igjen med en søt eggerøre som smaker av sitron. Ikke særlig fristende.

Det er imidlertid ganske lett å unngå dette; bruk vannbad. Det vil si kok opp litt vann i en gryte og sett en bolle med ingrediensene over det kokende vannet uten at det kommer i konktakt med vannet. På denne måten er det mye lettere å kontrollere temperaturen.  Hele prosessen tar kanskje litt lengre tid enn om lemon curden lages direkte i en tykkbunnet gryte, men som sagt har man mye bedre kontroll.

Ingredienser

  • skall og saft av 3-4 sitroner (ca 2 dl)
  • 200 gr sukker
  • 2 egg + 2 eggeplommer
  • 100 gr mykt smør

Fremgangsmåte

  • Riv skallet (bare det gule) av sitronene med et fint rivjern og press ut saften.
  • Ha skall, saft, sukker, egg og eggeplommer i en bolle.
  • Kok opp vann i en gryte og sett bollen oppi gryten slik at den hviler på kanten men at bunnen ikke kommer i kontakt med vannet.
  • Varm opp sitron/eggeblandingen under omrøring til den tykner. Kremen er ferdig når den legger seg som en tykk film på en skje.
  • Ta kremen av varmen og rør inn smøret.
  • Hell kremen over i sterile glass og oppbevar i kjøleskapet.

Tips

Lemon curd holder seg fint i kjøleskapet i et par uker.

Hei, jeg har ikke forsøkt å fryse lemon curd selv, men har hørt fra andre at det skal gå fint.
