Falafel er små, krydrede, deilige kikertboller som er svært populære i Midt-Østen. De er temmelig lette å lage, og kan brukes på mange måter. Jeg har tidligere forsøkt meg på å lage falafel, uten å lykkes. De har blitt veldig kornete og falt fra hverandre under steking. Denne gangen gikk det veldig bra. De holdt formen under steking og ble overhode ikke tørre eller kornete men faktisk ganske saftige. Kanskje skyldtes det at kikertene fikk tørke litt før de ble kjørt sammen med de andre ingrediensene. Ikke vet jeg, men denne gangen virket det i hvert fall. Oppskriften fant jeg på eatforum.org sine hjemmesider.

Jeg serverte mine falafel sammen med hummus, tztziki, pitabrød , masse grønnsaker og syltet rødkål. Oppskrift på det siste kommer i løpet av noen få dager.

Ingredienser

  • ca. 500 gr kokte kikerter (2 bokser)
  • 1 rødløk
  • 3 fedd hvitløk
  • 2 ts spisskummen
  • 2 ss potetmel
  • 1 ts salt
  • nykernet pepper
  • 1 ss sitronsaft
  • 1 dl grovt hakket bladpersille
  • olje til steking

Fremgangsmåte

  • Hell væsken av kikertene og skyll dem godt. Legg kikertene over på et kjøkkenhåndkle og tørk dem godt. De kan godt ligge en stund for å bli helt tørre.
  • Grovhakk løk og hvitøk.
  • Ha kikerter, løk og hvitløk i en matmøtlle og kjør til det er grovt malt.
  • Tilsett resten av ingrediensene og kjør til en masse som går sammen. Den skal ikke være helt finmalt.
  • Sett massen i kjøleskapet en times tid, eller lenger.
  • Form massen til små kuler på størrelse med en valnøtt (med skall) og tykk dem litt flate. Jeg synes det er greit å bruke hendene til dette.
  • Stek kulene på middels høy varme i litt olje.

Server i pitabrød med tzatziki, hummus og masse grønnsaker.
