Februar – Nå er det skrei i butikkene. Dette er virkelig en sesongvare, for den er kun tilgjengelig så lenge Lofotfisket varer. Resten av året får vi greie oss med den vanlige torsken. Men skreien altså. Den vandrer usedvanlig langt for å kunne gyte akkurat utenfor Lofoten. Den lange svømmeturen i det kalde vannet gir et ekstra fast og delikat kjøtt. Så nyt den mens du kan. Nedenfor finner du mine 5 beste oppskrifter med skrei.

 

Skrei med rødvinssaus

Noen smakskombinasjoner er klassiske rett og slett fordi de over tid har vist seg å være særdeles gode sammen uansett trender og andre innfall. Torsk og rødvin er en sånn kombinasjon. Her er rødvinen i sausen, og det er slett ikke så dumt.

Fritterte torsketunger

Dette er vår fish n’chips. Bortsett fra at jeg ikke serverer dem med chips. Men altså, torsketungene er herlig møre og passer utrolig godt sammen med den sprøe frityrskorpen. Men en skvis sitron og ertepuré ved siden av er dette høyverdig kosemat. Ser du torsketunger i fiskedisken, må du bare slå til.

Dampet skrei med sitronsaus

Den delikate hvite fisken passer utrolig godt sammen med en frisk sitronsaus med masse smør. Opprinnelig lagde jeg denne oppskriften med vanlig torsk, men jeg har laget den flere ganger med skrei, og det er en nydelig kombinasjon.

Skrei med chorizo og sellerimos

Fra frisk sitron hopper jeg videre til spicy pølse. Den røde chorizo-pølsen som er krydret med kraftig rød paprika er en flott kontrast til det fine hvite fisken. Den vanlige potetmosen er  byttet ut med sellerimos, og da blir det rett og slett fest på tallerkenen.

Vil du imponere noen med en skikkelig god middag, er dette et godt valg. Linser er et klassisk tilbehør til den hvite fisken og  sammen med urter, cherrytomater og parmaskinke er dette virkelig en rett for de fine anledningene. Skreien kalles jo også kjærlighetsfisken, så lag denne til en du er glad i, og se hva som skjer.
