REKLAME – Jeg har i grunnen vært ganske skeptisk til å fritere mat hjemme. Ikke nødvendigvis fordi det er usunt og fett, men mer fordi jeg har tenkt at det er grisete, litt skummelt med den varme oljen og at det vil lukte gatekjøkken i hele huset. Torsketunger er sesongvare, og må nytes her og nå, snart er det ikke å få tak i lenger. Det er kun i skreisesongen at de er tilgjengelig. Så da jeg fikk tak i disse torsketungene, måtte jeg bare prøv å lage friterte torsketunger – og gjett om det ble godt.

Mine fordommer ble forresten nesten gjort til skamme. Det var faktisk ganske enkelt å håndtere torsketungene, røren og den varme oljen. Lukten derimot, den var det ikke så mye å gjøre med. På grunn av oljen og en viss fare for overtenning turte jeg ikke bruke kjøkkenviften. Dermed luktet det definitivt litt gatekjøkken i huset, og ikke minst av meg resten av dagen. Men det var allikevel verdt det, for friterte torsketunger er definitivt seriøst digg. Det ble sprø og luftig deig rundt og mørt fiskekjøtt inni. Og for de som synes det høres ekkelt ut med torsketunger, kan jeg berolige og si at det smaker som vanlig fisk. Fish and chips fisk, altså.

For at det med den varme oljen ikke skulle være for skummelt brukte jeg ikke kjøkkenviften. Jeg ville ikke at flammene skulle bli trukket inn i viften og spre seg om oljen fikk overtenning. I tillegg hadde jeg et lokk til gryten rett ved siden av meg slik at jeg ville kunne stoppe flammene med en gang om det skulle skje. Og sist men ikke minst passet jeg på temperaturen nøye hele tiden. Det siste er selvsagt også helt nødvendig for at stekeresultatet skal bli bra. Dessuten passet jeg på å legge torsketungene veldig forsiktig oppi oljen og ikke ha for mange oppi om gangen. Dette funktet veldig bra, så det er nok ikke siste gang jeg friterer noe.

Som jeg allerede har avslørt, er jeg ikke en erfaren fritør (er det et ord?). Men resultatet ble temmelig vellykket, om jeg så får si det selv. For at deigen skulle bli så luftig som mulig, brukte jeg øl og ikke vann. Og ølet skal være så kaldt som mulig. Litt bakepulver i røren bidro nok også til et luftig resultat. Om alt dette er overtro, vet jeg altså ikke. Det eneste jeg vet er at det fungerte for i dette tilfellet.

Tilbehøret holdt jeg på den enkle og tradisjonelle siden. Ertepure med mynte passer veldig godt til. Og så lagde jeg en knallgod, men veldig enkel hvitløksdipp av rømme.

Ingredienser

  • 12 torsketunger
  • 220 gr hvetemel + 0,5 dl til forbehandling
  • 1 ts salt og pepper
  • 2,8 dl kaldt øl
  • 3 toppede ts bakepulver
  • 5 dl olje til fritering
  • 400 gr frosne grønne erter
  • 2 ss smør
  • 1 ss finhakket mynte
  • 1 boks rømme
  • 2 ss sitronsaft
  • 1/4 ts salt
  • 1/2 ts hvitløkspulver
  • salt
  • sitron

Fremgangsmåte

  • Rør sammen rømme, salt, sitron og hvitøkspulver og sett til side.
  • Skyll torsketungene og klapp dem tørre i kjøkkenpapir.
  • Bland 0,5 dl hvetemel sammen med salt og pepperi en skål og legg torsketungene oppi. Sørg for at de får mel over alt, men rist av overflødig mel.
  • Bland hvetemel (220 gr) og bakepulveret med iskaldt øl og rør til en glatt røre.
  • Varm opp oljen til 190 grader.
  • Dypp torsketungene oppi frityrrøren og la overflødig røre dryppe av før de legges forsiktig ned i oljen. Stek 2-3 stk. om gangen. Temperatruren i oljen vil synke ganske kraftig så pass på å justere varmen, men pass på at det ikke blir for varmt. Gjenta til alle torsketungene er fritert.
  • Kok opp vann og kok ertene som anvist på pakken. Hell av kokevannet og kjør ertene til en grov pure sammen med smøret og finhakket mynte. Smak til med salt.

Server torsketungene med ertepure, hvitløkdressing og sitronbåter. Dryss gjerne også litt flaksalt på.
