REKLAME – Har du spist lysing før? Det trodde jeg at jeg ikke hadde, for det er ikke en spesielt populær fisk her hjemme. Men det viser seg at den er særs populær i middelhavslandene og da heter den gjerne merluza. Så kanskje har jeg spist den allikevel på en av mine mange ferier i Spania og Italia. Da jeg så den i fiskedisken sist jeg var og besøkte Pipervika på fisketorget i Oslo så jeg denne og jeg ble nysgjerrig. Damen i disken mente den passer spesielt godt sammen med grønne grønnsaker. Vel hjemme bestemte jeg meg for å lage ovnsbakt lysing med grønn risotto.

Grønn risotto er noe jeg fikk for mange år siden på en av byens beste restauranter, og minne om den friske grønne fargen har fulgt meg siden. Nå var tiden kommet til å prøve å gjenskape en slik risotto. Jeg har riktignok forsøkt tidligere uten særlig hell. Det som gjorde susen denne gangen var å lage en pesto av forvellet spinat og litt persille separat som jeg tilsatte helt til slutt. Da holdt fargen seg akkurat så godt som jeg håpet.  Og smaken – den ble aldeles fortreffelig.

Lysingen er en fisk i torskefamilien og den har en mild og delikat smak, men fiskekjøttet er langt fastere enn for eksempel torsk.

Jeg har et samarbeid med Pipervika på Fisketorget i Oslo. De har et bredt utvalg fisk og en kompetent betjening. Stikk gjerne innom dersom du er i nærheten.

Ingredienser

  • 100 gr fersk spinat
  • 30 gr bredbladet persille
  • 1 hvitløkfedd
  • 0,5 dl olivenolje
  • 3 ss pinjekjerner
  • evt. litt vann
  • 1 sjalottløk, finhakket
  • 1 fedd hvitøk
  • 1 dl hvitvin
  • 4 dl varm fiskefond
  • 2 dl arborioris
  • 2 ss smør
  • 600 gr lysingfilet
  • salt og pepper

Fremgangsmåte

  • Skyll spinaten godt og fjerne evt. grove stilker. Plukk bladene av persillen. Forvell begge deler i 30 sekunder. Flytt deretter over i iskaldt vann. Ta bladene ut og klem ut så mye vann som mulig.
  • Kjør spinaten sammen med olje, hvitøk og pinjekerner til en helt glatt grønn pesto med en stavmixer. Dersom den blir for tykk, tilsett et par ss vann. Sett til side.
  • Forvarm ovnen til 180 grader.
  • Fres sjalottløken og 1 fedd hvitløk i litt olje til løken har blitt blank og myk. Tilsett risen og fres nok et par minutter til risen også har blitt blank.
  • Senk varmen og tilsett vinen. La det småkoke under omrøring til vinen har fordampet.
  • Legg fisken i et ildfast fat og drypp over litt olivenolje og salt. Bak i ca. 10 minutter. Den skal ha en kjernetemperatur på ca. 50 grader.
  • Tilsett fiskefonden litt etter litt mens du rører. Dersom du bruker fiskefond på flaske eller fiskebuljongterning, anbefaler jeg å vente til slutt med å tilsette det slik at den ferdige risottoen ikke blir for salt. Spe da bare med kokt vann.
  • Når risottoen har kokt i ca. 15 minutter vil den trolig være al dente. Sånn spiser italienerne helst risottoen, men om du vil kan du godt koken noen minutter til. Når den har fått den konsistensen du ønsker tilsetter du evt. fiskefond fra flaske eller terning og rør da inn smøret. Når det har smeltet rør inn 3 ss av spinatpestoen. Smak om risottoen trenger mer salt.
