Midten av mars og ute er det fortsatt meterhøye brøytekanter. Ærlig talt, nå er det nok! Jeg merker at jeg for hver dag som går blir mer og mer sugen på vår og varme. En av måtene jeg merker det best på er at jeg får veldig lyst på grønn mat. Jeg virkelig hungrer etter alt som er grønt og friskt. Som det ser ut nå, er det lenge til jeg kan plukke noe grønt i hagen eller skogen, så da får jeg nøye meg med det de har i butikken. For tiden går det derfor mye i urter, spinat, salater og alt annet som er grønt og bladaktig. I anledning kjøttfri mandag, lagde jeg en grønn pizza. Med spinatpesto i stedet for tomatsaus var den virkelig grønnn på alle måter.

På denne pizzaen har jeg squash, kokte poteter og rødløk i tillegg til ost. Det synes jeg var en kjempegod blanding. Dessuten, skadet det ikke for smaksopplevelsen at potetene ble litt sprø i kantene mens squashen ble myk som smør.  Dette ble rett og slett snadder som gjør seg like godt på fredagskvelden som på en kjøttfri mandag.

Oppskriften på sinatpesto nedenfor er litt større enn det er bruk for. Men den grønne spinatpestoen kan brukes som vanlig pesto til forskjellige pastaretter og den kan brukes i risotto for å gi den en flott grønn farge. Oppbevar bare restene på et tett glass i kjøleskapet, så holder den seg noen dager.

Ingredienser

  • 10 dl hvetemel
  • 4 dl vann
  • 4 ss olivenolje
  • 50 gr gjær
  • 1 ts salt
  • 8 ss spinatpesto (se nedenfor), eller vanlig pesto
  • 1 liten rødløk
  • 3 kokte poteter
  • 1/2 squash
  • 2 mozzarella
  • babyspinat
  • --
  • 100 gr fersk spinat
  • 30 gr bredbladet persille
  • 1 hvitløkfedd
  • 0,5 dl olivenolje
  • 3 ss pinjekjerner
  • evt. litt vann

Fremgangsmåte

  • Ha hvetemel og salt i en bolle. Smuldre gjæren oppi bollen. Tilsett vann og olivenolje. Elt deigen lenge. Det er lettere med en kjøkkenmaskin. La den gå i minst 10 minutter og gjerne det dobbelte.
  • Sett deigen til heving til deigen har blitt dobbelt så stor.
  • Forvarm ovnen til 250 grader, og la stekeplaten stå i ovnen så den også blir varm.
  • Skyll spinaten godt og fjerne evt. grove stilker. Plukk bladene av persillen. Forvell begge deler i 30 sekunder. Flytt deretter over i iskaldt vann. Ta bladene ut og klem ut så mye vann som mulig.
  • Kjør spinaten sammen med olje, hvitøk og pinjekerner til en helt glatt grønn pesto med en stavmixer. Dersom den blir for tykk, tilsett et par ss vann. Sett til side.
  • Skjær de kokte potetene, rødløken og squashen i tynne skiver og del mozzarellaen i biter.
  • Del deigen i 4 porsjonsemner eller to større som dekker hele bakeplaten. Kjevle ut til tynne leiver.
  • Smør et par ss pesto på hver leiv og legg på grønnsakene og osten.
  • Stek pizzaene en og en midt i ovnen i ca. 15 minutter til de er ferdige.

Legg på litt babyspinat og server med en frisk tomatsalat ved siden av.
