MAI – månedens råvare er spinat. Nå får vi jo kjøpt spinat året rundt, men opprinnelig var det en vårgrønnsak. Etter måneder med snø, is og lite ferske og klorofyllfylte grønnsaker er det herlig å spise noe som er så intenst grønt som spinat. Spinat er dessuten en allsidig grønnsak som kan brukes til så mangt.  Det er kanskje ikke så ofte at spinaten spiller hovedrollen i en rett, men den er allikevel viktig. Det er mye annet som også titter opp av jorden på denne tiden av året, og skulle du få lyst til å eksperimentere litt kan du bytte ut noe av spinaten med brennesle (i de varme rettene).

Som alle vet elsker jeg supper, og spinatsuppe er ikke noe unntak. Denne er veldig god, kjapp å lage og i tillegg er den veldig sunn. Ha mer kan man vel ønske seg? Med et egg og litt brød ved siden av blir suppen et fint lite, men allikevel mettende måltid.

Grønn smoothie

Dersom du ikke har lyst til å spise varm suppe, kan du jo drikke spinaten i stedet. Her har jeg laget en deilig grønn smoothie med spinat og mye annet godt oppi. Det å drikke en sånn til frokost er en skikkelig bra start på dagen.

Pai er alltid god og populær mat og denne Salmapaien er ikke noe unntak. Det er kanskje laksen som spiller hovedrollen i denne retten, men spinaten er absolutt viktig for smaken.

Grønne pannekaker

Hvem har sagt at vi ikke kan leke med maten? Disse pannekakene har fått sin grønnfarge fra spinat. Jeg har valgt å servere dem med kylling og paprika, men de kan like gjerne spises med syltetøy.

Laks med spinatcouscous

Om du ikke allerede har det, så synes jeg altså at laks og spinat er en veldig bra kombinasjon. Ja, forresten ikke bare laks, men all slags fisk, faktisk. Her er det dampet laks som er servert med sennep og spinatcouscous. Dette er en kjapp, næringsrik og velsmakende middag.
