Pai med spinat og chevre en veldig god og super rett som passer både som lunsjrett, eller til en lett middag. Med en god salat ved siden av er den et fullverdig måltid. Den er også ypperlig på et koldtbord. Dessuten er det veldig fint å ta med seg en pai på picknick eller tur.

Tradisjonelt er spinat en vårgrønnsak, selv om den nå er å få hele året rundt. Men det er altså en vårgrønnsak og jeg synes derfor det er på sin plass og feire våren med en skikkelig god pai. Det går fint an å erstatte all eller deler av spinaten med nesler eller skvallerkål.

Oppskriften til paideigen har jeg fra en kokebok som heter «The French Market Cookbook» og er skrevet av Clotilde Dusoulier. Den er laget med olivenolje i stedet for smør. Det gjør at den er veldig enkel å arbeide med. Den blir også veldig sprø, og holder seg godt også dagen etterpå. Jeg har valgt å tilsette oregano i deigen, men her er det stort spillerom for kreativitet. Andre urter eller små frø som sesamfrø eller valmuefrø kan også brukes.

Et annet pluss med denne deigen, er at deigrester kan stekes som små kjeks og serveres som snack. Eller bare litt å gumle på for kokken.

Ingredienser

  • 0,6 dl olivenolje
  • 0,6 dl kaldt vann
  • 260 gr. hvetemel
  • 1 ts salt
  • 2 ss tørket oregano
  • 1 stort egg
  • --
  • 500 gr fersk spinat
  • 1 bunt vårløk
  • 2 fedd hvitløk
  • 100 gr chevre
  • 3 egg
  • 1 dl kremfløte
  • 1 dl helmelk
  • salt og pepper

Fremgangsmåte

  • Ha mel, salt og urter i en bolle.
  • Tilsett olivenolje, egg og vann og bland godt
  • Hell deigen ut på en arbeidsflate og arbeid deigen godt sammen.
  • Smør en paiform med olje.
  • Rull deigen ut til den er stor nok til å dekke hele formen.
  • Sett formen i kjøleskapet i minst 30 minutter.
  • Sett ovnen på 160 grarder og forstek i 30 minutter.
  • Ta ut paiskallet og øk temperaturen i oven til 200 grader.
  • Skjær vårløken i tynne ringer og finhakk hvitløken
  • Fres begge deler i litt olje
  • Vask spinaten og tørk den i en salatslynte eller et kjøkkenhåndkle. Tilsett spinaten i løken og stek videre til spinaten har falt helt sammen.
  • Ha fyllet over i den forstekte paibunnen sammen med chevren som er smuldret opp.
  • Pisk sammen egg, melk og fløte og tilsett pepper og litt salt.
  • Hell over spinaten og sett i oven.
  • Stek i 30 minutter.
