Dersom du har små barn i huset vil jeg tro at disse monsterpannekakene slår an, for som du ser på bildet er disse pannekakene virkelig grønne. Og ikke en sånn litt blass, kjedelig grønn heller, men skikkelig knallgrønne. Det er spinat som gir pannekakene den flotte fargen.  I dag valgte jeg å servere mine grønne pannekaker med kylling og paprika slik at det ble en mettende middag ut av det. Men pannekakene smaker faktisk ikke av spinat i det hele tatt, så det går fint å servere dem med syltetøy også. Litt rødt bringebærsyltetøy vil være en fantastisk kontrast til det grønne.

Det er faktisk en god del havregryn i disse pannekakene, så de er jo på kanten til å være supersunne. Greit å vite for de som tenker på sånn. Men det viktigste er at de smaker kjempegodt – faktisk sånn som pannekaker pleier å smake. Jeg har som sagt valgt å fylle dem med kylling og paprika, men her er det bare fantasien som setter grenser. Fyll dem med skinke, røkelaks, ost eller andre grønnsaker. Eller syltetøy, bananer eller nugatti for de som heller vil ha en søt variant.

Pannekakerøren ser kanskje ikke så imponerende grønn ut i blenderen, men jeg kan garantere at det skjer et lite under i stekepannen.

Ingredienser

  • 200 gr spinat, vasket og klar til bruk
  • 2 dl havregryn
  • 2 dl hvetemel
  • 4 egg
  • 5 dl melk
  • 1/2 ts salt
  • smør til steking
  • 400 gr kyllingkjøttdeig
  • 3 paprikaer
  • salt og pepper

Fremgangsmåte

  • Ha alle ingrediensene til og med salt i en blender og kjør det til en helt glatt røre.
  • La røra svelle i ca. 20 minutter.
  • Skjær paprikaene i tynne strimler.
  • Stek pannekakene i en slipp-lett stekepanne
  • Samtidig, stek kyllingkjøttdeigen i en annen stekepanne.
  • Ta den stekte kyllingen ut av pannen og fres paprikaene på middels varme til de har blitt helt myke.
  • Ha kyllingen tilbake sammen med paprikaen og smak til med salt og pepper.

Server de varme pannekakene med kylling og paprika. Vel bekomme.
