Da jeg var barn var spinat noe litt suspekt, noe som helt sikkert smakte vondt og som de voksne ville at vi skulle spise fordi det var sunt. Derfor hadde de funnet opp historien om Skipper’n. Men etterhvert som jeg har blitt voksen har jeg blitt glad i spinat og synes den passer til riktig mange ting. Og kjenner du meg litt blir du ikke overrasket om jeg synes at suppe er en av de tingene spinat passer veldig godt til. Her har jeg laget en spinatsuppe som er uhyre kjapp å lage, og som samtidig har masse god smak.

Statistikken viser at mange av oss ikke klarer å få i oss nok frukt og grønt i løpet av en dag. Har du tenkt på at suppe er en strålende måte å få i seg ganske mye grønnsaker på en gang? En løsning kan derfor være å servere litt suppe som forrett. Server gjerne suppen i en kopp som alle kan drikke mens resten av middagen blir klar. Det er ikke bare spinat som kan lages til en sånn forrettsuppe, men fordelen med spinat er at den nesten ikke trenger noe koketid og dermed er veldig rask å slenge sammen. Jeg har veldig mange supper på bloggen her, så trenger du litt suppeinspirasjon kan du jo alltids sjekke ut den kategorien som heter supper.

Denne gangen har jeg laget spinatsuppe med hønsebuljong rett og slett fordi jeg synes det gir en veldig god smak. Men vil du ha en helt vegetarisk variant, går det fint å bruke grønnsaksbuljong også.

Ingredienser

  • 200 gr fersk spinat
  • 1 bunt vårløk
  • 2 fedd hvitløk
  • 1 ss smør
  • 8 dl hønsebuljong / grønnsaksbuljong
  • 1 dl kremfløte

Fremgangsmåte

Dette passer fint som en forrett for 4 eller hovedrett for to personer.

  • Finhakk vårløk og hvitløk og fres det i en gryte i smøret
  • til det har blitt mykt.
  • Ha oppi spinaten og fortsett å steke til spinaten har falt helt sammen.
  • Tilsett buljongen og la det koke i ca. 10 minutter.
  • Kjør suppen glatt med en stavmixer.
  • Hell oppi fløten og la suppen bli helt varm.

Server straks med kokte egg og gjerne litt olivenolje ringlet over. Litt brød ved siden av er godt om det er en hovedrett.

Tips

Du kan gjerne erstatte noe eller all spinaten med brennesle, om du har det.
