Jeg synes at laks, spinat og sennep er tre råvarer som kler hverandre veldig godt, og her kommer en kjapp og god rett som kombinerer alle disse tre. Laks i dampovn med sennep og spinatcouscous er en skikkelig hverdagshelt av en middagsrett. Den er kjapp å lage, smaker veldig godt og så er det jo fisk da.

Ofte synes jeg couscous kan smake ganske kjedelig, men i dag gjorde jeg noe lurt. Jeg blandet  sennep inn i kokevannet jeg blandet med den tørre couscousen. Det ga en couscous som virkelig smakte av noe, og kan dermed absolutt anbefales.

Jeg ser på bloggen min at noen av de mest populære oppskriftene er de som dreier seg om å tilbrede maten i dampovn. Derfor antar jeg at det er mange som har anskaffet seg dampovn, men er usikker på hvordan de skal bruke den.  Argumentene for å lage maten i dampovn er flere og gode. Det er raskt og maten beholder mye mer av sine næringsstoffer. Men kanskje viktigst er det at maten smaker mye bedre. Jeg leste et sted at å dampe maten er som HD for smaken. Bruk steketermometer

Når fisken dampes i dampovn går det fort, og grensen mellom akkurat passe dampet og tørr fisk er ikke så veldig stor. Det beste rådet jeg derfor kan gi er at du bruker steketermometer. Da får du akkurat den sånn som du vil ha den.  Passe kjernetemperatur for laksefilet er 50 grader. Synes du 50 grader høres lite ut, det er det ikke. Jeg lover.

De fleste dampovner kommer med innebygd steketermometer. Bruk det. Har du ikke et innebygd et, anbefaler jeg deg å skaffe deg et trådløst ett, for det er temmelig håpløst å sjekke et vanlig termometer gjennom all dampen.

Det å lage mat er imidlertid mye styrt av vane, så skal dampovnen bli en naturlig del av dine matlagingsvaner, er du nødt til å begynne å bruke den. Til å begynne med vil det være litt tungvint. Ikke nødvendigvis fordi det er tungvint, men fordi det er en ny måte å gjøre tingene på. Derfor må du tvinge deg selv til å bruke dampovnen helt til du har blitt vant til det. Da vil det gå av seg selv :).

Ingredienser

  • 600 gr laksefilet
  • salt og pepper
  • --
  • 2 dl fullkornscouscous
  • 2 toppede ts grov sennep
  • 1/4 ts salt
  • 3 dl vann
  • 1 pakke spinat
  • --
  • 1/2 beger lettrømme
  • 2 ts grov sennep
  • 1 liten potte dill
  • salt og pepper

Fremgangsmåte

  • Vask spinaten grundig, og stek den i en panne til den akkurat faller sammen. Ta av varmen og sett til side.
  • Tilbered couscousen som beskrevet på pakken, men rør inn sennepen i vannet før du tilsetter couscousen.
  • Mens couscousen trekker, tilberedes laksen.
  • Skjær laksen i porsjonsstykker og salte og peper godt.
  • Sett steketermometeret inn i den tykkeste delen av laksen og sett inn i dampovnen.
  • Damp laksen til den har en kjernetemperatur på 50 grader.
  • Rør inn spinaten i couscousen når den har trukket ferdig.
  • Rør sammen alle ingrediensene til rømmedressingen.
