For ca. en måned siden var jeg så heldig at jeg vant SalmaChef-konkurransen. Den gangen lagde jeg confitert Salma. Før konkurransen ble det nokså mye confitert Salma, så hele familien hadde fått nok for en stund. Men nå har det gått litt tid, og en SalmaChef med respekt for seg selv må jo ha Salma på menyen en gang i mellom. Her kommer det derfor en lekker Salmapai med spinat og purre.

Pai er en deilig og allsidig rett som kan varieres i det uendelige. Den kan være søt eller salt, vegetarisk eller inneholde kjøtt eller fisk. Matpaier kan brukes både til lunch, middag eller stå på et koldtbord sammen med mange andre retter. Den gang jeg var student i Danmark var pai en fast følgesvenn, for den mettet mye uten å koste noe særlig. Mitt beste paiminne er fra den gangen de tre tenorene (Pavarotti, Domingo og Carreras) holdt konsert i København. For at flest mulig skulle få oppleve konserten ble den sendt på storskjerm i alle de store danske byene. Jeg mener å huske det var Carlsbergfondet som sponset begivenheten. Været var flott og folk troppet opp i store mengder. Over alt i parken hadde folk innrettet seg som best de kunne for å få en hyggelig aften. Noen dekket på bord med hvite duker og hadde champagne og russisk kaviar. Andre hadde en pose med noen bajer. Vi var en gjeng venner som hadde pakket en picknickkurv med hvitvin, salat og nettopp pai. Så brettet vi ut pleddet vårt og hadde en fortreffelig picknick til vakker musikk. Det var tider det…

Ingredienser

  • 4 dl hvetemel
  • 200 gr. smør
  • 1/2 ts salt
  • 400 gr salmalaks
  • 1 pose fersk spinat
  • 1 liten purre
  • litt smør til steking
  • 1/2 beger creme fraiche
  • 2 dl lettmelk
  • 4 egg
  • 100 gr. jarlsbergost
  • 1/2 ts salt
  • nykvernet pepper

Fremgangsmåte

  • Begynn med å lage deigen. Bland hvetemel og salt og smuldre kaldt smør inn i melet til alt ligner små gryn. Samle deigen til en klump og pakk inn i plastfolie og legg i kjøleskapet i ca. 30 minutter.
  • Mens deigen ligger i kjøleskapet forberedes resten.
  • Vask spinaten godt og stek den litt i smør til den har falt helt sammen.
  • Vask og skjær purren i små biter. Fres den i litt smør til den har blitt mør.
  • Klem væsken ut av spinaten og hakk den grovt.
  • Pisk sammen creme fraiche og melk til det er glatt. Rør inn eggene helt og ha i spinat, purre, salt og pepper.
  • Skjær Salmalaksen i terning og riv osten.
  • Kjevle ut deigen. Legg den gjerne mellom to ark med plastfolie - da går det som en lek.
  • Legg deigen i en paiform og klem godt inn i kantene.
  • Prikk bunnen med en gaffel og stek i ovnen i 10 minutter på 200 grader.
  • Ta paiformen ut og legg laksebitene utover.
  • Strø på halvparten av osten.
  • Hell over melk/eggeblandingen og fordel det jevnt utover med en gaffel.
  • Dryss over resten av osten og stek ferdig til eggestanden har blitt fast.

Server varm, lunken eller kald med en frisk salat ved siden av.
