Sous vide tilberedning av mat har vært populært i et par år nå. Jeg har ikke vært så interessert i det fordi jeg trodde det krevde dyrt utstyr. Og på kjøkkenet er jeg en minimalist i utstyrsveien. Selvsagt må jeg ha gode kniver, gryter og panner, men alt mulig fancy og ikke minst dyrt utstyr forsøker jeg å styre unna. Derfor ingen sous vide på meg, selv om jeg for så vidt har hatt stor sympati for ideen. Men for noen dager siden leste jeg et innlegg på tryneboka, om at man kan lage sous vide hjemme uten å ha en sous vide maskin eller en sirkulator for den saks skyld. Og med ett var interessen tent. Alt som trengtes var en stor gryte, Gladpac, steketermometer og komfyr. Alt dette har jeg, og jeg begynte straks å pønske på hva jeg kunne teste denne teknikken ut på.

Og så, for noen dager siden kom det tikkende inn en tekstmelding på telefonen min fra Husbond. Lars, en venn hadde kjøpt en halv elg, og lurte på om vi var interessert i å kjøpe noe elgkjøtt. Det var vi selvsagt og på fredag lå det en ytrefilet i kjøleskapet vårt. Jeg har ikke så stor erfaring med elg, men jeg hadde hørt at elgkjøtt kan bli veldig tørt dersom det stekes for lenge/mye. Og bingo, her hadde jeg et perfekt stykke kjøtt for nettopp sous vide. Som tenkt så gjort. Nå var i hvert fall søndagsmiddagen i boks.

Egentlig er dette like enkelt som det er genialt. Sous vide teknikken er jo bare å varme opp kjøtt (eller hva som helst annet) i vann som holder den ønskede kjernetemperaturen. På den vanlige sous vide teknikken, vakuumeres kjøttet og senkes ned i et vannbad som holder konstant temperatur, og denne kan styres veldig nøyaktig med maskinen. Jeg har ikke vakuummaskin, men pakket kjøttet inn i mange lag med Gladpac, og det gikk like fint. Man kan visst også bare putte kjøttet i en plastpose og senke det ned i vann før man lukker posen. Trykket i vannet sørger da for at det blir tilnærmet vakuum. Dette har jeg ikke prøvd, men det er kanskje lettere dersom man ønsker å ha noe flytende sammen med kjøttet – f.eks olivenolje eller smør. Ovnen min er ganske gammel, så jeg visste ikke hvor stabil den er i temperaturen. Så for å sikre så stabil temperatur som mulig, brukte jeg en stor støpejernsgryte. Først varmet jeg opp vannet i gryten til 55 grader og satte ovnen på 60 grader. Når vannet var varmt nok la jeg kjøttet oppi, satte lokk på gryten og puttet hele sulamitten inn ovnen. Jeg sjekket temperaturen noen ganger underveis, og den holdt seg meget stabilt på de 55 gradene. Jeg går ut i fra at jerngryten og alt vannet sørget for stabiliteten.

Etter 3 1/2 time tok jeg kjøttet opp av vannbadet sitt og pakket det ut. Skal si jeg ar spent. For å få hele fileten i stekepannen måtte jeg skjære den i to, og da fikk jeg se det nydeligste rosa kjøttet tvers igjennom. Wow. Dette var virkelig en stressfri måte å få perfekt tilberedt kjøtt på. Fileten så riktignok litt trist ut i fargen på utsiden, så et minutt i meget varm stekepanne skulle gjøre susen, men her gjorde jeg en tabbe. Da jeg pakket ut kjøttet var det litt væske i plasten, så for å få mest mulig smak i det lille som ble av stekesjy, helte jeg alt opp i stekepannen. Det resulterte i at kjøttet ikke fikk den fine stekeskorpen jeg hadde tenkt meg. I stedet burde jeg ha klappet kjøttet tørt før jeg hadde det i den varme pannen. I oppskriften nedenfor beskriver jeg derfor hvordan jeg vil gjøre det neste gang, for dette ble så bra at jeg nok bruker teknikken flere ganger. For det beste av alt; Kjøttet ble kjempemørt og ikke det spor tørt.

Ingredienser

  • 600 gr ytrefilet av elg
  • 1 ts grønne pepperkorn, grovmalt
  • olje til steking
  • 2 fedd hvitløk
  • 1 sjalottløk
  • --
  • 250 gr kantareller
  • smør til steking
  • --
  • 1 beger seterrømme
  • 1/2 dl hvitvin
  • 1 ts soyasaus
  • 1 ts dijon sennep
  • 1 ss tørket og finhakket steinsopp
  • 3 skiver brunost

Fremgangsmåte

  • Sett stekeovnen på 60 grader.
  • Knus pepperkornene grovt i en morter. Klapp kjøttet tørt med kjøkkenpapir og gni inn pepperen.
  • Pakk kjøttet inn i flere lag Gladpac, eller legg det i en ziplock-pose og forsøk å presse ut så mye luft som mulig underveis. Jeg brukte 5 lag plastfolie.
  • Varm opp rikelig med vann i en jerngryte til det holder 55 grader.
  • Hele fileten skal være dekket med vann.
  • Legg fileten oppi vannet, legg lokket på gryten og sett alt inn i ovnen.
  • La fileten ligge i 3 1/2 time, og gjør noe annet i mellomtiden.
  • Når det nærmet seg spisetid rens soppen og sett på poteter.
  • Stek soppen i smør og når soppen ferdig, kok ut stekepannen med halvparten av hvitvinen.
  • Hell dette så over i en liten gryte.
  • Ta kjøttet ut av vannbadet, pakk det ut av folien og klapp det tørt.
  • Fres hvitløk og sjalottløk i litt olje i en stekepanne slik at oljen får litt smak.
  • Stek kjøttet raskt på begge sider i den varme pannen slik at det får en pen brun stekeskorpe. Ta kjøttet ut av pannen.
  • Kok ut stekepannen med resten av hvitvinen og ha det så oppi gryten med vinen som ble brukt til å koke ut soppannen. Tilsett rømmen og rør det til en glatt saus. Ha i soyasaus, sennep, steinsopp og brunost. La det få koke noen minutter slik at smakene får satt seg. Smak på sausen og juster evt. litt slik at den smaker slik du liker den.

Server med kokte poteter og aspargesbønner.
