Kyfllingfrikassé er en skikkelig klassisk søndagsmiddag, og så utrolig godt. Vi snakker mørt kjøtt, masse grønnsaker og rikelig med deilig saus til å knuse potetene i. Og sausen er selvet clouet her. Den er laget av kokekraften fra kyllingen og har tonn med smak i utgangspunktet. Da skal det ikke så mye til å løfte sausen enda mer.

Jeg har brukt en blanding av blomkål, brokkoli og gulrøtter, men det er ingen ting i veien for å bruke andre grønnsaker. Mange rotgrønnsaker vil passe godt, og nå på våren kan det også passe fint med sukkererter, asparges og reddiker. Bruk det du har og liker. Det viktigste etter min mening er å ikke koke grønnsakene for mye. De må gjerne ha en litt sprø kjerne og yte ørlite grann tyggemotstand. Sånn liker i hvert fall jeg det best.

Skal du lage middag til færrre, kan du bruke kyllinglår i stedet. Beregn da ett lår per person. Tilsvarende kan du spe på med et lår eller to om det er flere rundt bordet. Lårene trenger litt kortere koketid, så omtrent 45 minutter skulle være tilstrekkelig. Sørg også for å  juster mengden grønnsaker samtidig.

Ingredienser

  • 1 hel kylling (evt. 6 kyllinglår)
  • ca. 1,5 l vann
  • 1,5 ts salt
  • 10 pepperkorn
  • 1 liten bunt persille
  • 1 liten løk
  • 1 + 2 gulrøtter
  • 1 brokkolibukett
  • 1 blomkålhode
  • 75 gr hvetemel
  • 75 gr smør
  • 3 ss seterrømme
  • sitronsaft
  • 1 kn.odd kajennepepper
  • salt og pepper

Fremgangsmåte

  • Legg kyllingen i en gryte og hell over vannet. Velg en gryte som er stor nok for kyllingen, men ikke for vid. Vannet skal dekke kyllingen så hell evt. på mer om det er nødvendig.
  • Ha oppi salt, pepper, persillestilker, 1 gulrot delt i biter og løken delt i grove biter.
  • La det koke opp og skum av.  La kyllingen koke på svak varme i ca. 1 time. Den er ferdig når lårbenet lett kan dras ut.
  • Ta kyllingen opp av gryten, men ta vare på kraften og sil den.
  • Mens kyllingen koker, kutt opp grønnsakene i pene mindre stykker.
  • Kok dem såvidt møre i lettsaltet vann.
  • Lag saus ved å smelte smør og rør inn melet. Spe med kraften og kok opp.
  • Smak sausen til med rømme, sitronsaft, salt, pepper og kajennepepper.
  • Ta kyllingkjøttet av bena og del det i pene, litt store stykker.
  • Legg kyllingkjøttet og grønnsakene tilbake i sausen og varm opp til alt er gjennomvarmt.

Server med rikelig med hakket persille og kokte poteter. Vel bekomme.
