Tirsdager har blitt suppedagen fremfor noen hjemme hos oss, og denne tirsdagen var intet unntak. Suppe er som regel raskt å lage og smaker deilig. Dessuten varmer suppe så godt nå som det begynner å bli kaldt i luften. Tom ka gai er en thailandsk kyllingsuppe, og som all thailandsk mat balanserer den fint mellom salt, syrlig, søtt og bittert. Suppen dufter herlig av urter og sitrus og på et blunk er jeg tilbake til en strand i Thailand dersom jeg lukker øynene. Tom ka gai er uhyre populær i Thailand og man får servert den nesten over alt. Derfor, og ganske sikkert fordi den er så god, er dette en favoritt hos mange Thailand-farere.

Det er imidlertid ikke vanskelig å gjenskape denne suppen hjemme. Det er riktignok en del eksotiske ingredienser, men det meste lar seg skaffe i en velassortert dagligvareforretning. Det som kanskje kan være vanskelig å få tak i er kaffirlime. Men får du først tak i det kan du godt kjøpe en stor pose, for de egner seg meget godt til frysing. Og bladene kan puttes direkte fra fryseren oppi gryten. Når man vel har alle ingrediensene i hus, er det raskt å lage suppen. Det tar ikke særlig mer enn en halvtime å trylle frem denne eksotiske lekkerbisken. Har du ikke smakt den før anbefaler jeg den på det varmeste. Som alltid er balanse viktig når det gjelder thailandsk mat. Her skal det være balanse mellom salt, surt, umaim og søtt. Når du skal smake til suppen så anbefaler jeg derfor å holde litt igjen med lime, chili og fiskesaus og så forsøke seg med litt etter hvert slik at du finner en balanse mellom smakene som du liker.

Ingredienser

  • 1,5 l hønsebuljong
  • 6 blader kaffirlime
  • 6 skiver ingefær (3 mm tykke)
  • 2 fedd hvitløk
  • 2 sitrongresstilker
  • saften fra 2 lime
  • 1 rød chili
  • 2 gulrøtter
  • 2 tomater eller 10 cherrytomater
  • 400 gr kyllingbryst
  • 1 boks kokosmelk
  • 1 bunt vårløk
  • 4 sjampinjonger
  • 1 ss fiskesaus
  • frisk koriander

Fremgangsmåte

  • Kok opp buljongen.
  • Slå på sitrongresset med skaftet på en kniv slik at det sprekker litt. Skjær det i 3 cm biter.
  • Ha i ingefær, hvitløk, sitrongress og kaffirlime i buljongen og la det småkoke i 10 minutter.
  • Skjær gulroten i tynne strimler som er ca. 3 cm lange.
  • Del tomatene i båter og ta ut frøene, eller skjær cherrytomatene i to.
  • Skjær sjampinjongen i skiver.
  • Skjær vårløken i ringer.
  • Del kyllingkjøttet i terninger.
  • I Thailand får man suppen servert med alt krydderet oppi. Dersom du ikke ønsker det tar du nå ut det med en hullsleiv.
  • Ellers så lar du det bare fortsatt være i gryten og tilsetter chili, grønnsaker, kokosmelk og kylling. La det trekke til kyllingen er kokt. Smak til med saft fra lime og fiskesaus.

Pynt med koriander og server med jasminris ved siden av. Vel bekomme.
