Pin

Suppe er en av mine favorittretter å lage når jeg skal ha noe enkelt men godt og som går fort å få i stand. Denne suppen er en forenklet variant av den store franske suppen bouillabaisse. Dagens variant er med buljong, uten vin og med bare to fiskesorter. Men den er full av smak og er deilig varmende en våt og sur høstdag allikevel. Server den med godt brød og en persillepesto slik som jeg har gjort og du har et skikkelig bra måltid på litt over en halv time.

I butikkene er det masse deilige rotfrukter nå, så her har jeg virkelig boltret meg med å bruke mange forskjellige. Det gir suppen en fin fyldig smak uten å være for påtrengende. Det synes jeg passer fint til det milde fiskekjøttet.

Ingredienser

  • 1 liten løk
  • 1/2 fenikkel
  • 2 ss olivneolje
  • 1,5 l fiskebjuljong
  • 1 boks tomater
  • 2 gulrøtter
  • 1 persillerot
  • 1 pastinakk
  • 2 fedd hvitløk
  • 1 chilipepper
  • 250 gr torskefilet
  • 250 gr laksefilet
  • --
  • 2 dl bredbladet persille
  • 3 ss olivenolje
  • 3 ss pinjekjerner
  • salt og pepper

Fremgangsmåte

  • Begynn med å kutte alle grønnsakene i småbiter.
  • Varm deretter oljen i en stor gryte og fres løk, fenikkel og hvitløk et par minutter til det har blitt mykt og blankt uten å ta farge.
  • Tilsett så buljong, tomat og resten av grønnsakene. La det koke i ca. 10 minutter.
  • Imens skjærer du fisken i små stykker (1x2 cm).
  • Legg dem i og la suppen trekke i fem minutter.
  • Ha persille, olje og pinjekerner i en beholder og kjør til en litt grov masse med stavmixer. Tilsett evt. mer olivenolje dersom blandingen blir veldig tyktflytende.

Server suppen med en god skje persillepesto oppi og godt brød ved siden av.
