Hva er vel bedre enn å sette seg til bords med en deilig rykende varm, velsmakende gryterett når høstkvelden setter inn? For meg er det i hvert fall få ting som kan måle seg med det på denne tiden av året. Denne gryteretten er proppfull av gode smaker fra lammekjøtt og forskjellige rotgrønnsaker som alle gir smak til den ferdige retten. Jeg har brukt bog i skiver. Bog er en av de rimeligere stykningsdelene man kan kjøpe av lam. Men til denne retten er det helt unødvendig å gå for noe dyrere. Bog er nemlig veldig smakfullt, men trenger litt mer koketid før det blir mørt.  Her har jeg brukt nokså lav varme og ellers tatt tiden til hjelp . Sluttresultatet ble kjøtt som var blitt så mørt at det falt fra hverandre og ga minimalt med tyggemotstand, men stor smak.

Det som er så herlig med gryteretter er at de i stor grad lager seg selv. Riktignok må man gjøre en innsats til å begynne med i form av skjæring og evt. litt bruning/steking. Men når det er gjort passer maten seg stort sett selv. Det frigjør tid til andre ting jeg heller vil gjøre som å gå en tur i skogen, se en film eller noe helt annet.Dessuten er det lett å lage til mange. Egentlig er det helt genialt med gryteretter.

Ingredienser

  • 1 kg lammebog i stykker
  • salt og pepper
  • 2 ss rapsolje til steking
  • 2 dl vann
  • 1 stor persillerot
  • 1 stor pastinakk
  • 1/2 sellerirot
  • 2 gulrøtter
  • 2 dl hvitvin
  • 1 boks hakkede tomater
  • 12 sjalottløk
  • 1 ss tørket timian
  • 1 ss balsamicoeddik
  • 2 ts sukker

Fremgangsmåte

  • Del kjøttet opp i passelige serveringsstykker.
  • Dryss på salt og pepper og brun det i oljen i en stor gryte. Gjør dette i to omganger og kok ut gryten med halvparten av vannet hver gang.  Spar på vannet.
  • Skjær grønnsakene i munnrette biter og rens løken.
  • Ha alle ingrediensene unntatt sukker og balsamico i gryten.
  • Sett gryten med lokk på inn i ovnen som er varmet opp til 120 grader. La gryten godgjøre seg der i ca. 3 timer.
  • Rett før servering tas gryten ut og smakes til med evt. mer salt og pepper, sukker og balsamico.

Server rykende fersk med kokte poteter eller evt. nybakt brød. Vel bekomme.
