Jordskokksuppe var en gjenganger rundt om på hovedstadens restauranter for noen år siden. Det er fortsatt en god suppe, og i tillegg er det en av Husbonds favoritter. Så av og til står det fortsatt på menyen her i huset, selv om restaurantene har beveget seg videre og nå serverer andre små smakebiter.

Denne suppe er enkelt å lage, og egner seg godt som en liten forrett. Suppen har en ganske karakteristisk, nøtteaktig smak og er ganske mektig på grunn av all fløten, så jeg vil nok anbefale å servere den i forholdsvis små porsjoner og gjerne med litt salt kjøtt eller fisk oppi. Da blir det snadder.

Jeg synes jordskokksuppe er den perfekte forretten for en litt festlig vintermiddag. Server den gjerne før noe vilt som for eksempel ytrefilet av elg med rømmesaus.

Ingredienser

  • 250 gr jordskokker
  • 1/2 løk
  • olje til steking
  • 1 dl hvitvin
  • 2,5 dl grønnsakbuljong
  • 2 dl kremfløte
  • salt og pepper
  • sitronsaft

Fremgangsmåte

  • Rens jordskokkene og skjær dem i skiver. Finhakk løken.
  • Fres jordskokker og løk til løken har blitt blank.
  • Tilsett da hvitvin og grønnsaksbuljong til jordskokkene er dekket. La det småkoke til jordskokkene er møre, ca. 15-20 minutter.
  • Tilsett fløten og varm det opp.
  • Kjør alt med stavmixer eller i en blender til det er glatt.
  • Smak til med salt, pepper og juster evt. med litt sitronsaft dersom du ønsker en litt friskere smak.

Server gjerne med litt parmaskinke oppi og ringle litt god olivenolje over. Pynt med persille. Vel bekomme.
