Kalkun er deilig festmat og det er feiende flott å sette en hel fugl på festbordet. Det passer imidlertid ikke alltid å steke en hel fugl. Det kan føles som litt av et prosjekt. Dessuten krever det jo mange gjester rundt bordet for å få spist opp en hel kalkun. Da kan en kalkunfilet være et godt alternativ. Her har jeg laget kalkunfilet med rosenkål og deilig fløtesaus. Det er også super gjestemat, men med langt lavere skuldre.

For å få et så saftig bryst som mulig har jeg stekt fileten i en stekepose. Fordelen med dette er at all kraften blir i posen og blir en ypperlig base for sausen. Ved siden av har jeg bakt rosenkål i ovnen og blandet med sprøstekt bacon. Det synes jeg er en aldeles herlig kombinasjon.

Ingredienser

  • 1 stk Kalkunfilet (1,3 kg)
  • salt og pepper
  • 2 ts estragon
  • 3 fedd hvitløk
  • 2 dl vann
  • --
  • 3 ss hvetemel
  • 3 ss smør
  • 6 dl stekekraft (fyll opp med kyllingkraft dersom det ikke er nok)
  • 3 dl kremfløte
  • 3 ts ripsgele
  • 1 ts soyasaus
  • salt og pepper
  • evt. sukkerkulør
  • --
  • 1 kg rosenkål
  • 150 gr bacon
  • olivenolje
  • salt og pepper

Fremgangsmåte

  • Forvarm ovnen til 125 grader.
  • Krydre kalkunfileten godt med salt, pepper og estragon og stek på alle sider til den er pent brun.
  • Legg kalkunfileten og hvitløksfeddene i en stekepose. Stikk et steketermometer inn i den tykkeste delen av fileten.
  • Kok pannen ut med vannet og hell vannet over i stekeposen.
  • Lukk posen igjen og sett inn i ovnen. La kalkunfileten steke til den når 68 grader (ca. 1,5 time).
  • I mens rens rosenkålen og legg den i en form. Hell over litt olivenolje og dryss med salt og pepper.
  • Ta kalkunfileten ut, pakke den inn i aluminiumsfolie og legg over et kjøkkenhåndkle og la det hvile i minst 20 minutter. Hell kraften over i en gryte og hold den varm.
  • Øk temperaturen i ovnen til 200 grader og sett inn rosenkålen. Bak i ca. 20 minutter, til den er myk.
  • Mens rosenkålen bakes, stek bacon i tynne strimler til det er sprøtt. Bland rosenkål og bacon til slutt.
  • Lag sausen; Smelt smøret på middels varme. Når det har sluttet å bruse tilsettes melet. Stek under omrøring til smør/melblandingen har fått karamellfarge.
  • Tilsett den varme stekekraften (evt. blandet ut med kyllingkraft) til bruningen. Tilsett litt først og rør godt. Tilsett resten og la det koke i minst 10 minutter på svak varme. Tilsett fløten og bring opp til kokepunktet igjen.
  • Smak sausen til med ripsgele og soyasaus. Dersom du synes sausen blir blek, kan du justere med et par dråper sukkerkulør.
  • Skjær kalkunfileten i skiver og server med kokte poteter, rosenkålen blandet sammen med baconet og rykende varm saus.
