På denne tiden av året står festhøytidelighetene i kø. Det er 17. mai, konfirmasjoner og etter hvert også brylluper i disse flotte vår og forsommermånedene. Det betyr også for mange, store selskaper med tildels mange gjester som skal arrangeres. Da gjelder det å finne frem til gode retter som ikke krever alt for mye innsats der og da, men som allikevel smaker godt og har en viss wow-effekt. Aspargessuppe er nettopp en slik rett.  Den kan lages delvis klar dagen før og bare varmes opp før servering. Den har også en nydelig smak av asparges og ser passe flott ut når den anrettes på tallerkener sammen med tilbehøret.

Det er ingen hemmelighet at jeg er veldig glad i asparges. Jeg spiser det året rundt, men når det er sesong spiser jeg det nok mange ganger i uken. I sesongen er det altså asparges til både hverdag og fest. Som oftest er det grønne asparges det går i siden de ikke må skrelles og fordi de er raskere å koke.

De hvite aspargesene krever derimot mer arbeid og mer tid. De må skrelles, fordi de har et skall som er veldig trevlete og har en litt bitter smak. Den beste måten å skrelle asparges på er å legge den flatt på en skjærefjøl og skrelle den med en gulrotskreller eller lignende. Helst en som ikke skjærer for tykt, for da blir jo halve aspargesen borte. Grunnen til at den bør skrelles liggende er at den brekker nokså lett, og det er jo kjedelig, særlig dersom aspargesene skal serveres hele.

Når du lager aspargessuppe er det også viktig å skrelle aspargesen nøye, for hvis ikke vil det bli små irriterende trevler i suppen. Men altså, med unntak av all skrellingen, så er denne suppen temmelig lettlaget og så smaker den veldig godt.

Ingredienser

  • 1 kg hvite asparges
  • 1 liten løk
  • 1 ss smør
  • 1 l kyllingkraft (eller fond)
  • 2 ss tørr sherry, eller hvitvin
  • 2 dl kremfløte
  • salt
  • 150 gr bacon eller skinke
  • bladpersille

Fremgangsmåte

  • Skrell aspargesen nøye og kutt opp i 2 cm biter og legg toppene til side.
  • Finhakk løken og fres den i smøret til den har blitt blank og myk.
  • Tilsett aspargesbitene minus toppene, kyllingkraften og vinen.
  • La det småkoke til aspargesen er helt myk (15-20 minutter avhengig av tykkelsen på aspargesen.
  • Mens suppen koker kok opp litt lettsaltet vann i en gryte og kok aspargestoppene til de er møre, ca. 5 minutter. Sett til side.
  • Stek bacon eller spekeskinke i små biter til det er sprøtt. Sett til side
  • Finhakk persille.
  • Når aspargesbitene i suppen er helt møre, kjøres suppen helt jevn med stavmixer eller i en blender.
  • Tilsett fløte og kjør også dette sammen med suppen.

Server suppen rykende varm med aspargestopper og strø over finhakket persille og bacon. Ha gjerne  noen tynne siver toast ved siden av. Vel bekomme.

Tips

Suppen kan gjøres nesten helt klar dagen i forveien. Følg oppskriften frem til fløten skal tilsettes. Sett kaldt. På selve dagen varm suppen forsiktig opp og kjør den sammen med fløten rett før servering.
