Eton mess er en klassisk engelsk dessert med røtter tilbake til i hvert fall slutten av 1800-tallet. Eton mess består som oftest av knuste marengs, jordbær og krem, men andre bær og sommerfrukter kan også brukes. Det er trygt å si at denne desserten er på den søte siden, men av og til er det jo akkurat det man vil ha – ikke sant. Dessuten er den enkle å lage og passer godt til de fleste anledninger. Den passer for eksempel godt på 17. mai i stedet for eggedosis, kanskje?

Historien sier at desserten oppsto på den prestisjefylte kostskolen Eton, men hvem vet. Sikkert er det i hvert fall at den i dag serveres på Eton og mange andre steder i England, og at det er en skikkelig sommerfavoritt. Og det er lett å forstå, for denne desserten smaker søtt (veldig søtt, skal det sies), men også friskt av, ideelt sett, solmodne jordbær. Dette er mektige saker, så ett godt råd er å ikke lage for store porsjoner.

Det er ikke mange ingredienser i denne retten. Faktisk er det bare 3, eller fire om du regner med sukker også. Derfor er det som så ofte, at retten blir ikke bedre enn summen av ingrediensene. Kjør de beste jordbærene du kan finne. Pikekyssene kan du lage selv, eller du kan kjøpe ferdige i butikken. Velger du å lage dem selv pisker du eggehviter og sukker sammen til en stiv marengs som du steker i ovnen på 80 grader i minst 2 timer. Vei eggehvitene og ha oppi 1,5 ganger så mye sukker. Sørg for at bollen er helt fettfri når du skal piske dem.

Ingredienser

  • 16 pikekyss
  • 1 kurv jordbær
  • 2+2 ts sukker
  • 3 dl kremfløte

Fremgangsmåte

  • Rens jorbærene. Hold av noen jordbær til pynt og skjær resten i små biter.
  • Legg jordbærbitene i en skål med 2 ts sukker og knus jordbærene lett med en skje. La dem gjerne stå å sukre seg en liten stund.
  • Pisk fløten og 2 ts sukker til stiv krem.
  • Knus 12 pikekyss grovt. Frem til nå kan desserten lages i god tid.
  • Rett før servering: Legg marengs, krem og jordbær lagvis i pene glass.
  • Pynt med jordbær og pikekyss til slutt og server straks mens marengsen fortsatt er sprø.
