Kalkun med tunfisksaus er en lett omarbeidet versjon av en av mine absolutte favoritter i det italienske kjøkkenet, nemlig vittello tonnato. Denne retten består av tynt skårede skiver av kalv, eller i dette tilfellet kalkun, pent dandert på et fat. Oppå kjøttet er det en saus som i stor grad består av tunfisk. Det høres sannsynligvis litt spesielt ut, men det er altså helt himmelsk godt. Her snakker vi skikkelig mørt kjøtt som møter en kremet og helt fløyesmyk saus. Sausen er imidlertid ikke bare myk og snill. Den har masse smak fra ikke bare tunfisk, men også ansjos, kapers og sitron. Og vær så snill og ikke gi opp på grunn av den ingredienslisten. Stol på meg – det er dødsgodt.

Etter en kalkunmiddag for noen dager siden satt jeg igjen med en del kalkunfilet. Og med dette kom også ideen om å lage denne retten med kalkun i stedet for kalv. Og for å ha sagt det med en gang. Det fungerer som bare det. Kalkun med tunfisksaus er en ypperlig forrett eller smårett.

Noen ganger har jeg fått denne retten servert med det nokså tykt lag med saus ut over alt kjøttet. Det synes jeg blir litt for mye av det gode. Jeg liker bedre å legge noen skjefuller oppå kjøttet og heller servere resten av sausen i en liten skål ved siden av. Da kan de som ønsker mer forsyne seg selv.

Jeg ser også at det er flere som serverer denne retten med parmesan høvlet over. Jeg står over, men synes du det er en god idé så er det bare å kjøre på.

Ingredienser

  • Kalkunfilet
  • 1 boks tunfisk (ca. 130 gram)
  • 2 ansjosfileter (italiensk type på glass)
  • 2 ss kapers
  • 2 eggeplommer, hardkokt
  • 2 ss olivenolje
  • 1/2 sitron, saften
  • 1-2 ss vann (evt.)
  • salt og pepper

Fremgangsmåte

  • Ha tunfisken, ansjosen, eggeplommene og karpersen i en blender, eller bruk stavmixer.
  • Kjør det til en glatt masse mens du tilsetter olivenolje, sitronsaft og eventuelt 1-2 ss vann for litt løsere konsistens.
  • Skjær kalkunfileten i så tynne skiver som du klarer og legg utover et fat. Legg litt av sausen oppå og pynt med sitron, hele kapers og litt salat.

Server med godt brød, og resten av sausen ved siden av.

 

Tips

La gjerne sausen stå et par timer i kjøleskapet før servering så smakene riktig får satt seg.
