Noen av dere som leser bloggen min jevnlig har kanskje fått med seg at Tuppen lager middag en dag i uken. Ofte går det i pasta, så når hun kom og sa at hun ville lage fisk var det bare oppmuntrende gloser fra min side. Valget falt på tex-mex laks, en rett hun lærte i mat og helsefaget i fjor.  Dette er en rett som er kjapp å lage og som smaker kjempegodt. Faktisk så godt at Tuppen, som vanligvis ikke er overbegeistret når det er fisk til middag, spiser dette med liv og lyst. Det er utrolig hva litt taco-krydder kan gjøre med matlysten.

Ingredienser

  • 500 gr renskåret laksefilet
  • 1 pose salte tortilla chips
  • 1 pose taco-krydder
  • 6 ss olivenolje
  • litt revet ost
  • 1 glass tomatsalsa
  • 1 beger cremé fraishe
  • 2 avokadoer
  • cherrytomater

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Skjær laksen i 2 cm store terninger.
  • Bland tacokrydderet med oljen til en mainade og legg fisketerningene oppi. Vend fisken rundt slik at det kommer marinade på alle bitene.
  • Legg tortillachipsen i en ildfast form og legg over fiskebitene rett før det skal inn i ovnen.
  • Strø over litt revet ost og sett inn i ovnen i 15 minutter.
  • Ta ut og hell over tomatsalsa og rømme og stek i ytterligere 10 minutter.
  • I mens skjæres avokado i biter.
  • Ta formen ut av ovnen og legg avokado og cherrytomater på toppen.

Server med en frisk salat ved siden av.

Hei Cecilie,

Denne skal jeg prøve.

Har du ellers noen forslag til middag som både skal dekke behovet til en som er vegetarianer og en som ikke er så glad verken i fisk eller grønnsaker? Vanskelig å finne på til middag uten å måtte lage flere varianter. Dvs bytte ut kjøtt med f.eks.

Prøvde meg på retten idag.

Veldig god og godt likt av barna. Imidlertid så ble tiden i ovnen for laksen.
Deler av stykkene var for lite stekt. Er det en idé å forsterke laksen før den
legges oppå Taco skjellene?
