Dette er en veldig enkel og rask, men usedvanlig velsmakende spagettirett. Spaghetti alla puttanesca betyr ludderets spagetti, men det er ikke noe løsaktig over denne maten. Kanskje kommer navnet av at disse kvinnene ikke hadde så mye penger, og måtte derfor bruke billige ingredienser. Eller så er det noen som mener at de brukte denne retten for å lokke til seg kunder. Hvem vet… Jeg vet i alle fall at det smaker himmelsk og at innsatsen er minimal.

Det er ansjosen som gir denne retten karakter. I mat smaker den overraskende lite fisk, men gir en pikant, krydret saltsmak og tonn med umami. Mange forbinder nok ansjos med de små boksene som pleide å ligge ved siden av eggene i butikken. Og som stort sett eldre mennesker brukte å spise.  Styr unna disse billigste variantene, og velg heller kvalitetsansjos fra Italia eller Spania. De har rett og slett en mye bedre smak.

Hurtigmat

Det tar faktisk ikke lengre tid å lage denne retten enn det tar å koke spagettien. Dessuten er det ingredienser som mange allerede har i skapene sine. Det er faktisk bare tomater som er ferskvare i denne retten, så selv med et temmelig ribbet kjøleskap er det mulig å få i stand denne retten. Mangler du noen av ingrediensene er det ikke så farlig, det eneste jeg synes er et must, er ansjosen.

Ingredienser

  • spagetti til 2 personer
  • 2 ss olivenolje til steking
  • 1/2 glass ansjos
  • 2 fedd hvitløk
  • 1 stor sjalottløk
  • 2 ts oregano
  • nykvernet pepper
  • 2 plommetomater
  • 10 soltørkede cherrytomater
  • 2 ss kapers
  • 10 svarte oliven uten sten

Fremgangsmåte

  • Kok spagettien som anvist på pakken.
  • Hakk ansjosen i små biter, og finhakk løk og hvitløk.
  • Varm opp olivenoljen i en gryte og fres ansjos og løk i oljen til ansjosen har smeltet og løken har blitt blank.
  • Del sherrytomatene i fire, og ta ut kjernene. Skjær tomatkjøttet i små biter.
  • Ha tomatene oppi ansjos og løkblandingen sammen med oregano og pepper. Rør til tomatene har blitt varme.
  • Tilsett kapers, soltørkede tomater og oliven rett før servering.
  • Ta av 1 dl av spagettivannet og hell resten av vannet av spagettien og rør spagettivannet inn i sausen.
  • Bland spagettien inn i sausen.

Server gjerne med litt revet parmesan og et dryss av basilikumblader eller andre urter. En blandet grønn salat er alltid godt ved siden av. Vel bekomme!
