I dag byr jeg på en vinterlig kamskjellsalat med rosenkål og jordskokk. Denne salaten smaker like godt som den er vakker å se på. Den søtlige, nesten fete smaken av kamskjellene får flott kontrast i de lett bitre rosenkålbladene og den nesten nøtteaktige smaken av jordskokk. Hasselnøtter byr på litt krønsj og en varm vinaigrette bringer litt syre til ligningen.

Denne forretten egner seg kanskje best til litt mindre selskaper da det er en litt fiklete rett. Den er ikke vanskelig, men krever mange operasjoner. Tar du deg bryet, vil de garantert imponere når retten blir satt på bordet.

Ingredienser

  • 12 kamskjell
  • 8 rosenkål
  • 100 gr jordskokk
  • 12 hasselnøtter
  • 20 blå druer
  • bladpersille
  • 1 sjalottløk
  • 2 ts rødvinseddik
  • 1/2 ts salt og nykvernet pepper
  • 50 gr smør

Fremgangsmåte

  • Sett ovnen på 200 grader og rist nøttene i 20 minutter.
  • Ta dem ut og gni dem i et kjøkkenhåndkle slik at skallet faller av. Hakk i grove biter.
  • Plukk bladene av rosenkålene og gi bladene et oppkok på 1 min i lettsaltet vann. Hell av vannet og legg i iskaldt vann for avkjøling. Ta opp og legg over på et kjøkkenhåndkle for å tørke.
  • Rens jordskokkene og skjær i tynne skiver, bruk gjerne mandolin om du har det. Kok i lettsaltet vann i ca. 1 minutt og legg deretter over i kaldt vann. Ta opp og legg over på et kjøkkenhåndkle.
  • Skjær druene i to og legg til side.
  • Kok opp smøret og la det syde til bunnfallet begynner å bli brunt og det får en nøtteaktig smak. Hold smøret varmt.
  • Finhakk sjalottløk og ha det sammen med rødvinseddik, salt og pepper i en bolle.
  • Dander rosenkålblader, jordskokk, nøtter, bladpersille og druer på 4 tallerkener.
  • Skjær et grunt rutemønster i overflaten på kamsjkjellene. Stek dem i litt smør på ganske høy varme. De skal ikke steke lenge - max 2 minutter på hver side.
  • Legg 3 kamskjell på hver tallerken.
  • Pisk det varme smøret inn i rødvinseddiken. Smak til om sausen trenger mer salt, pepper eller syre.
  • Drypp dressingen over salaten og server straks.
