OK, la meg være ærlig. Jeg har aldri vært superbegeistret for rosenkål. Ofte blir den servert overkokt og slapp som et uinspirert tilbehør til søndagssteken. Det er i grunnen veldig synd, for ovnsbakt rosenkål er faktisk noe helt annet. Dette gjorde rett og slett at jeg er nødt til å revurdere mitt forhold til denne grønnsaken.

Når rosenkålen blir bakt i ovnen med olivenolje og salt, blir den alt annet enn slapp og uinspirert. De bakte rosenkålene blir litt crispy utenpå, men samtidig mye og gjennomstekte i midten. Valnøttene gir dessuten ekstra krunsj, og bakingen får frem en dypere smak av valnøttene også. Sitronsaften setter prikken over i’en .

Dette er rett og slett et supert tilbehør til julens mange middager. Server det til skinkestek, vilt og fugl. Det er lett å lage, og kan settes i ovnen når kjøttet tas ut for å hvile. Dette er imidlertid ikke en rett det lønner seg å lage på forhånd. Står kålen for lenge etter at den er tatt ut av ovnen, mister den sprøheten sin og dermed mye av magien. Rensing og klargjøring kan du selvsagt gjøre på forhånd, slik at det bare er å sette formen inn i ovnen.

Ingredienser

  • 400 gr rosenkål
  • 2 ss olivenolje + ekstra til servering
  • 1 ts salt
  • 50 gr valnøtter
  • sitron

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Rens rosenkålen og del den i to og legg den i en ildfast form sammen med valnøttene.
  • Dryss over salt og hell på olivenolje og bland godt.
  • Bak i ovnen i 25 minutter, rør litt rundt i formen midtveis. Følg med på slutten. Riktignok skal rosenkålen bli godt stekt, men ikke brent.
  • Ta ut og klem over sitronsaft og drypp litt ekstra god olivenolje over.

Server straks ved siden av svin, vilt eller fugl. Vel  bekomme.
