I desember er det mye selskapelighet, både i julen og i adventstiden. Har du lyst til å servere gjestene dine en skikkelig god forrett som også har en høy imponeringsfaktor, kan du prøve å lage laks og kamskjelltartar. Den er enkel å lage, men som sagt en veldig god forrett. Laks og kamskjelltartaren kan også lages god tid i forveien. Det synes jeg er så deilig. Rett før gjestene kommer er det alltid så mye annet å gjøre allikevel, så da er det fint å ha en ting mindre å tenke på.

Jeg har brukt dill, men det er også godt å bruke estragon, persille, gressløk eller en blanding av disse. Bruk det du har eller får tak i. Ha en fin fest, og vel bekomme!

Ingredienser

  • 300 gr røkelaks
  • 300 gr laksefilet
  • 8 kamskjell
  • saften av 1 sitron
  • skallet av 1/2 sitron, fint revet
  • 4 ss hakket frisk dill
  • 2-3 ss sjalottløk, finhakket
  • 3 ss olivenolje
  • salt og pepper
  • lakserogn (valgfritt)
  • --
  • 2 dl kremfløte
  • saften av 1 sitron
  • skallet av 1/2 sitron (bare det gule, revet fint)
  • 1 ss dill, finhakket

Fremgangsmåte

  • Skjær røkelaksen, laksefileten og halvparten av kamskjellene i små terninger.
  • Ha dette sammen med resten av ingrediensene (minus lakserognen) i en bolle, og sett i kjøleskapet minst i 30 minutter.
  • Bland sammen alle ingrediensene til sausen og sett i kjøleskapet. Syren fra sitronen skal få fløten til å tykne.
  • Rett før servering:  Fordel fisken på åtte tallerkener. Dersom du ønsker fine runde medaljonger, må du bruke en slags form. Det finnes metallringer, men det går like fint an å skjære over en brusflaske eller lignende.
  • Skjær de siste kamskjellene i så tynne skiver som du klarer og dander oppå fisken. Har du lakserogn legger du den på toppen. Pynt med en dillkvast.
  • Legg kremen rundt tartarene og pynt med mer dill.

Server gjerne med tynne skiver ristet loff ved siden av.

Dersom fløten ikke har tyknet, kan du piske den til en halvslapp krem.
