Hjemme hos oss har vi alltid en stor julefrokost 1. juledag. Da dekkes bordet med all slags godsaker av både søtt og salt. Det er kjøttmat i form av kald ribbe, leverpostei og rull og fisk i form av laks og sild. I tillegg er det oster, frukt og flere typer tilbehør. Og et av de selvsagte tilbehørene er jo sennep. Sennepen jeg liker å sette på bordet den dagen er av den grove typen. I tillegg skal den være sterk og litt søt. Denne sennepen er nettopp slik, grov, sterk og søt på en gang.

Det er faktisk veldig enkelt å lage sennepen selv. Det er også ganske billig, så er du på jakt etter hjemmelagde julegaver  som kan tilfredsstille et slunkent budsjett, kan dette være tingen.

På bildet har jeg brukt tuja til å pynte bordet. Det er OK, men det er viktig å være oppmerksom på at tuja er giftig og ikke må komme i kontakt med maten.

Ingredienser

  • 1 dl gule sennepsfrø
  • 1/2 dl brune sennepsfrø
  • 2 ts sennepspulver
  • 1 ss tørket estragon
  • 1/2 dl eplesidereddik
  • 1/2 dl vann
  • 1 ss honning
  • 1 ss brunt sukker
  • 1 dl rapsolje
  • salt og pepper

Fremgangsmåte

  • Legg sennepsfrøene i vann kvelden før.
  • Neste dag, hell vannet av sennepsfrøene og ha 3/4 av dem i en foodprosessor.
  • Ha resten av ingrediensene oppi og kjør det til en masse. Jo mer du kjører desto finere i konsistensen blir sennepen.
  • Rør inn resten av sennepsfrøene.
  • Smak på sennepen og juster evt. med mer eddik eller søtt og salt og pepper.
  • Ha sennepen over på små glass.

Smaken i sennepen utvikler seg, så den er best etter en dag eller to.

Tips

Dersom du ønsker en sennep som ikke er så sterk, kan du koke sennepsfrøene i 5 minutter før du bruker dem. Det skal ta litt av snerten ut av dem. Sennepen holder seg i flere uker i kjøleskapet.
