Brokkolini er en nokså sjelden grønnsak å se i butikkhyllene, men er du så heldig å komme over en pakke med denne grønnsaken er den absolutt verdt å ta med seg hjem. Den er søtere enn vanlig brokkoli. Noen sier smaken minner om asparges, men det er jeg ikke så sikker på. God er den i hvert fall – og sunn. Brokkolinien har lange tynne stilker, og disse spises også.

En skikkelig god måte å servere denne grønnsaken på er med vinaigrette – som en lun salat. Jeg lager en sterk sennepsvinaigrette som kontrasterer den søte smaken godt. Dette er en rett jeg «fant opp» i studietiden. Da lagde jeg den riktignok med brokkoli, og det går selvsagt også veldig bra. Den er fin som en lunsjsalat også. Tilsett gjerne litt sprøstekt bacon og server med litt godt grovbrød til og du har et supert mettende måltid.

Ingredienser

  • 250 gr brokkolini
  • --
  • 1 ts dijonsennep
  • 1 ss rødvinseddik
  • 3 ss god olivenolje
  • salt og pepper

Fremgangsmåte

  • Kok brokkolinien i rikelig lettsaltet vann i 4-5 minutter.
  • Den skal fortsatt være litt fast i stilken. Hell av vannet.
  • Lag en vinaigrettedressing ved å blande sennepen og eddiken i en bolle.
  • Pisk inn oljen og smak til med salt og pepper.
  • Sausen skal ha en sterk sennepssmak. Hell dressingen over brokkolininen og server. Vel bekomme
