Pin

Pizza Margherita – historien om en italiensk dronning og en patriotisk baker.  Pizzaen ble laget av en baker som ønsket å hylle sin dronning. Pizzaen fikk derfor fyll i det italienske flaggets farger. Røde tomater, hvit mozzarella og grønn basilikum. Dette og evt. litt olivenolje og ikke noe mer skal være på den originale pizzaen Margherita.

Pizza var vanlig mat for fattigfolk i området rundt Napoli på slutten av 1800-tallet da denne pizzaen ble laget. Ved å lage den til kongelige ble pizzaen bedre ansett og retten spredte seg til stadig større deler av Italia.

Jeg har valgt å koke en tomatsaus som jeg har smaksatt med salt, pepper og litt hvitløk.

Ingredienser

  • 2 dl vann
  • 25 gr. gjær
  • 2 ss olivenolje
  • 5 dl hvetemel
  • 1/2 ts salt
  • --
  • 1 boks gode tomater (f.eks. Mutti)
  • olivenolje
  • salt og pepper
  • 1 fedd hvitløk
  • 2 mozzarellaer
  • basilikumblader

Fremgangsmåte

  • Varm vannet opp til 37 grader og løs opp gjæren i det lunkne vannet.
  • Bland mel og salt i en bolle og ha oppi gjærvannet og oljen. Elt deigen godt og la den heve til dobbel størrelse.
  • Mens deigen hever lages tomatsausen. Varm opp litt olivenolje i en gryte og fres hvitløken uten at den tar farge. Ha oppi tomatene og smak til med salt og pepper. La sausen koke ca. 5 minutter. Sausen skal være glatt, så dersom tomatene ikke er knuste, kjør sausen med en stavmixer.
  • Del deigen i 4 emner og kjevle ut rundinger.
  • Del mozzarellaene i biter.
  • Bre tomatfyll utover pizzaene og legg på ostebiter.
  • Stek i så varm ovn som overhodet mulig. 250-300 grader. Har du pizzastein og en ovn som går til 300 grader tar det ca. 4 minutter. Dersom oven ikke blir så varm forlenger du bare steketiden til pizzaen har blitt stekt og osten er helt smeltet.

Legg på basilikumblader og server varm med en salat ved siden av. Vel bekomme.
