Bondeomelett kan inneholde så mangt, men som regel er det i hvert fall poteter i den. Det er vel i grunnen en typisk restemiddag der man slenger alle slags middagsrester – poteter, kjøtt og grønnsaker sammen og heller egg over. Men det trenger ikke å være slik. Her kommer en vegetarisk variant, her er det nypoteter, fersk spinat og en hel fetaost som spiller hovedrollen.  Nettopp disse ingrediensene er en veldig god kombinasjon og en klassiker i den østre delen av Middelhavet. Har du vært innom en tyrkisk grønnsaksbutikk har du sikkert lagt merke til de fylte brødene de selger som snacks – børek. Svært ofte er de nettopp fylt med poteter, spinat og fetaost. Selve brødet kan bli litt fettete for meg, men fyllet det liker jeg.

Her har jeg brukt den samme kombinasjonen av poteter, feta og spinat, og jeg synes det fungerer veldig bra. Deilige nypoteter sammen med den salte fetaosten og den litt mineralaktige smaken av spinat. Herlig. Ved siden av hadde jeg tomatsalat som gir en frisk smak og kokt nykål med smør på. Det siste rett og slett fordi jeg ikke kunne motstå fristelsen til å kjøpe den første nykålen jeg så i butikken.

Ingredienser

  • 800 gr poteter
  • 200 gr spinat
  • 1 stor purre
  • 1 ss smør
  • 200 gr fetaost
  • 8 egg
  • 8 ss melk
  • salt og pepper

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Vask potetene godt og skjær dem i tykke skiver. Kok potetene møre i lettsaltet vann.
  • Forvell spinaten. Hell av vannet og kjøl raskt ned i kaldt vann. Klem ut så mye vann som mulig av spinaten og finhakk den.
  • Skjær purren i skiver og fres den i smør til den blir myk og faller litt sammen.
  • Mos fetaosten grovt med en gaffel.
  • Ha potetskivene, purren og fetaosten i en ildfast form.
  • Knekk eggene i en bolle og pisk sammen med melken. Ha den finhakkede spinaten i eggeblandingen. Smak til med salt og pepper.
  • Hell spinat- og eggeblandingen over grønnsakene.
  • Sett formen inn i oven og stek i ca. 20 minutter til eggene har satt seg.

Server straks med grønnsaker ved siden av. Vel bekomme.
