Dorade er en typisk middelhavsfisk. Den smaker utmerket og kan tilberedes på mange forskjellige måter. Fordi fiskene vi får her ofte er forholdsvis små, kan de gjerne tilberedes hele. I dag ville jeg saltbake dem.

Man kan kanskje tro at fisken blir veldig salt når den bakes fullstendig pakket inn i salt, men det er ikke tilfellet. Fuktigheten fra fisken gjør at saltet blir hardt og danner en skorpe rundt fisken slik at det ikke slipper noen fuktighet ut. Saltet trenger heller ikke inn i fisken. Med denne metoden blir fisken rett og slett veldig saftig. Jeg liker å servere fisken helt enkelt, bare med salat eller lettkokte grønnsaker ved siden av og sitron til å drysse over. Det er nok og vidunderlig godt.

Oppskriften nedenfor er i ikke så mye en oppskrift som en beskrivelse av en fremgangsmåte. Jeg har brukt sitron og persille for å smakssette fisken, men mange slags urter vil fungere godt, så bruk det du har for hånden og liker best selv.  Oppskriften er også veldig enkel å skalere opp eller ned alt etter som hvor mange som skal spise.

Ingredienser

Fremgangsmåte

  • Forvarm oven til 200 grader.
  • Rens fiskene. Ta ut innvoller og gjeller. Skyll godt og klapp fiskene tørr inni.
  • Fyll bukene med sitronskiver og persille. Dryss med salt og pepper inni buken.
  • Dryss grovt havsalt i bunnen av en ildfast form som er stor nok til å romme begge fiskene. Legg fiskene oppi. Hell over mer grovt salt til det dekker fiskene helt. Drypp litt vann over.
  • Sett inn i ovnen og bak i ca. 30 minutter.
  • Når tiden har gått, tas fisken ut. Saltet har dannet en hard skorpe. Slå hull på saltskorpen, børst av saltet og løft fisken forsiktig ut slik at den kan serveres hel.

Server med en frisk salat og drypp sitron over. Vel bekomme.
