I min jakt på gode vegetaroppskrifter speider jeg stadig lengre, og dagens veggis kommer fra India. For mange år siden bodde jeg hos en indisk familie i New Delhi, mens jeg arbeidet som trainee i Goodyear. Etter et halvt år i India og et par særdeles alvorlige tilfeller av Dehli Belly, har jeg i mye over 20 år hatt et anstrengt forhold til maten fra dette landet. Men sakte og sikkert klarer jeg nå å synes at enkelte indiske matretter faktisk er gode. Denne er en av dem.

I India spiser de, for noen kanskje litt overraskende, ikke så rent lite poteter. Men i motsetning til oss ser de på poteten som en grønnsak og ikke som tilbehør. Ofte brukes poteter i forskjellige curryer, som denne – aloo gobi.

Familien jeg bodde hos var ikke vegetarianere, men det var allikevel mye grønnsaker både til lunsj og middag. Denne curryen med blomkål og poteter var slett ikke uvanlig hjemme hos den familien jeg bodde hos. Ikke la deg skremme av den lange ingredienslisten, det er slett ikke vanskelig å lage denne curryen. Ganske fort går det også.

Ingredienser

  • 1 stort blomkålhode
  • 8 små poteter
  • 3 ss rapsolje
  • 1 ts hele korianderfrø
  • 1 ts fennikelfrø
  • 1/2 ts pepperkorn
  • 2 ts gurkemeie
  • 2 ts garam masala
  • 1 ts chiliflak
  • 1/2 stor løk
  • 2 fedd hvitløk
  • 1 ss finhakket ingefær
  • 2 dl vann
  • 2 store tomater, grovhakket
  • 1/2 ts salt
  • 100 gr selskapserter
  • --
  • 250 gr gresk yoghurt
  • 1/2 slangeagurk
  • 1 neve mynteblader
  • 1/2 grønn chili
  • --
  • naan

Fremgangsmåte

  • Begynn med å skjære opp poteter i terninger og blomkålen i små buketter.
  • Ha korianderfrø, fennikelfrø og pepper i en morter og knus grovt.
  • Finhakk løk og hvitløk.
  • Varm oljen i en stor gryte og fres krydderet i et par minutter på middels varme til det dufter sterkt. Tilsett løk, hvitløk og ingefær og fres et par minutter til løken har blitt blank og myk.
  • Ha potetene, tomatene og vannet  i gryten og kok i ca. 5 minutter under lokk.
  • Rør godt så potetene blir dekket med krydderblandingen. Ha oppi blomkålen og rør på nytt.
  • Legg på lokk og la det småkoke i 10-15 minutter til blomkålen og potetene er møre.
  • Pass på at det ikke koker tørt. Dersom det blir litt lite væske, tilsett litt mer vann.
  • Tilsett ertene og la dem bli varme.
  • Mens curryen koker lages raitaen. Riv agurken på et grovt rivjernt og klem ut så mye vann som mulig. Hakk mynte og chili og ha oppi yoghurten.

Server curryen med naan og raita.
