Her kommer en temmelig sommerlig oppskrift på stekt fisk med nykål, reddiker og rømmedressing. Det er vel i grunnen bare agurken som mangler. Men i dag er det ikke makrell eller laks, men kolje som får spille hovedrollen på tallerkenen. Det er ikke så ofte jeg ser slike små fileter av kolje. Vanligvis pleier den å være mye større. Men altså i dag lå det flotte fileter i fiskedisken.  Nykålen har også komme, og da var jo den saken avgjort. Skulle du ikke få tak i kolje, går det fint an å bruke annen småfisk også, som for eksempel fjellørret, ishavsrøye, makrell, eller i grunn hva du nå måtte ha. Bare pass på at fileten har skinnet på. Da er det lettere å bevare fileten hel under steking.

Noe av det beste jeg vet å gjøre med nykål er å smørdampe den, eller som her forvelle den først i lettsaltet vann og deretter vende den inn i smeltet smør. Da kommer virkelig kålen til sin rett synes jeg.  Reddiken fikk være med for å gi litt farge og sprøhet til retten.

Ingredienser

  • 4 koljefileter (ca. 800 gr)
  • salt og pepper
  • 2 ss rapsolje
  • 100 gr smør
  • 1 stort hode nykål
  • 2 dl rømme
  • gressløk
  • 2 ss sitronsaft
  • 4 reddiker

Fremgangsmåte

  • Skjær kålen i strimler. Forvell kålen i lettsaltet vann i 2 minutter. Hell av vannet og sett til side.
  • Krydre filetene med salt og pepper.
  • Varm oljen i en panne til middels varme og legg filetene med skinnsiden ned. Ha oppi halvparten av smøret og når det begynner å skumme, øses det varme smøret over filetene. Stek til fisken nesten er gjennomstekt. Øs over med jevne mellomrom.
  • Finhakk gressløken og bland den inn i rømmen. Rør inn sitronsaften og smak til med salt og pepper.
  • Smelt resten av smøret i en gryte og varm opp kålen i smøret. Den skal ikke ta farge.
  • Skjær reddikene i tynne skiver.
