Det er oktober, og  mens tyskerne allerede har pakket sammen sin oktoberfest, lader vi fortsatt opp til vår private som kommer senere i oktober. Til godt øl passer det selvsagt godt med pølser. Disse pølsene har jeg kjøpt hos Strøm-Larsen som holder til på Torshov i Oslo. Det er en skikkelig slakter som lager sine egne pølser, men det går selvfølgelig an å finne gode pølser med mye kjøtt i i butikken også. Poenget er bare å bruke skikkelige pølser med mye kjøtt og smak i for å få litt (oktober)fest rundt bordet.  For ordens skyld, dette er ikke et reklameinnlegg. Jeg bare liker pølsene fra Strøm-Larsen veldig godt.  

Pølsene kan jo naturligvis spises alene ved siden av den over omtalte skummende drikken, men for at det skal bli en skikkelig middag serverer jeg dem med potetstappe og bønner. Jeg synes at pølser fortjener følge av sennep, og gjerne en som er skikkelig sterk. Jeg vet jo at noen foretrekker en rød tomatbasert saus til pølsene, og det får jo bli deres sak. Men for meg er det altså pølser og sennep som gjelder. For å ytterligere bygge opp om dette har jeg laget en sterk sennepsdressing til de kokte og varme aspargesbønnene. Jeg brukte en blanding av norsk grov sennep og grov dijonsennep. Men her kan man jo selvsagt bruke akkurat den eller de typene sennep man selv liker best. Jeg synes altså at dressingen skal smake sterkt av både sennep og eddik, men smak for all del til dressingen slik du selv liker den best.

Hjemme hos oss liker vi potetstappen med litt klumper i, men liker du den helt glatt kan du bruke mixmaster til å få den helt glatt. Eventuelt kan du presse potetene gjennom en potetpresse. Det er forresten viktig å koke potetene uten salt, for da blir ikke stappen seig. Tilsett heller saltet til slutt.

Ingredienser

  • 6-8 bratwurst
  • 1 kg poteter
  • 2 ss smør
  • 2 dl melk
  • 1 ts salt
  • 400 gr aspergesbønner
  • 1 sjalottløk
  • 2 ts grov sennep
  • 2 ts rødvinseddik
  • 3 ss olivenolje
  • salt og pepper

Fremgangsmåte

  • Skrell potetene og kok dem uten salt til de er møre.
  • Mens potetene koker rens bønnene og finhakk sjalottløken.
  • Lag dressingen ved å blande sennep og eddik i en bolle tilsett oljen og pisk til det har blitt en nokså tykk dressing. Smak til med nykvernet pepper og evt. litt salt.
  • Skjær små snitt i pølsene. Da unngår du at skinnet sprekker under steking.
  • Stek pølsene på middels varme til de har blitt pent brune og varme helt gjennom. Det tar kanskje 10 min.
  • Kok bønnene i 3-5 minutter. Hell av vannet og bland inn dressingen.
  • Når potetene er ferdig kokte hell av vannet og damp potetene litt slik at alt vannet fordamper. Knus dem med en potetmoser og spe med melk og smør. Smak til med salt. Tilsett evt. mer melk om stappen virker tørr.

Server varmt og gjerne med et glass øl til. Vel bekomme.
